Incredible, no notes. Brought in my very, very abused Global G2 knife and 30 minutes and an incredibly reasonable $22.40 later, the guy undid 5 years of damage (dullness, chips, previous roommates unauthorized attempts to run it through a dollar store knife sharpener, etc). My second Knifewear visit, the first being in Calgary. A destination shop for the serious cook in you. Once you've worked with these high end Japanese knives you'll never look back. My old Wusthof knives? They now do their work collecting dust in the basement. A massive array of fine knives of all shapes and sizes, and they welcome you testing them out. The staff is first-rate, absolutely know their stuff and are happy to answer questions. They also do sharpening on site, or if you've damaged or broken a handle, there's almost nothing they can't fix. Talk about a great niche! Very definitely worth making the trip to this neighborhood which is also sprinkled with some exceptional fine and casual dining. read more

Knowledgeable and very helpful staff. They showed us lots of options, gave us potatoes to try cutting and left us time and space to decide. They carry handcrafted knives from different Japanese blacksmiths, but also knives from factories. We came here to get our first chef knife and pretty happy with it. They also have other kitchens and shaven stuffs. If you are worried that you don't know anything about knife or don't even know how to cut stuff, they provide classes too! Knifewear is tucked away in the same plaza as the Vancity on Main St. just a block up from King Edward. There is very little storefront presence, other than a nice flag and sign that says "Knifewear" hidden behind the shrubbery and greens infront. Inside is open and spacious, with knives and display cases lining more than half the store, and kitchen accessories in the other half. Knifewear specializes in Japanese knives, which differs from the typical european knives we in North America are accustomed to such as Henckels, Wüsthof, etc. If you think european knives are expensive, then you'll be in for a big surprise when you look through Knifewear's inventory. most petty/paring knives are priced around 100+, with chef knives averaging 200-300+ easily. What sets the Japanese knife market and European market apart is the broad range of brands and smiths available in Japan, versus the large conglomerate companies like Henckels & Wüsthof. Many Japanese brand names, especially small shop smiths have several centuries worth of history and expertise, ranging as far back as the 1300s. Peter, the sales associate who helped me, was very knowledgeable and proactive in recommending me knives based on my needs and budget. He didnt bring me just 1 knife, but atleast some 10 different knives and asked me to test them all out and for my thoughts. Everyone who works at Knifewear are industry professionals, so they know their way around the various types and steels used in knife construction; something you dont get at ming woo or house of knives. Even though my intent for the day was to browse and ask some questions, at the end of the day, I fell in love with a 350$ knife that i swore Ide return for eventually. If you are an industry professional, aspiring cook, or a hobbyist looking for a new partner in crime, I'd definitely recommend visiting Knifewear and browse their vast selection. These guys are the bomb! I'm so glad I decided to go here instead of some crappy, industrial knife sharpening place in a dark alley somewhere (those exist, honestly!). I had heard of them through a past employer and I can attest to being very impressed. The aesthetic of this place is stunning - from it's logo that pays homage to Lucky Peach (or so I hypothesize) to the incredible selection of Japanese knifes, accessories, guitar-neck display pieces and the cookbooks...oh the cookbooks! They had my knifes done in 10 minutes and didn't laugh at how dull they were, or how I insisted on sharpening my $12 starfrit pairing knife because its the only whose weight really works in my hands. I'm grateful to the employee who gave another cheap pairing knife a quick glide across his sharpening block for nothing, if nothing but to humor me. (It's hard to find good pairing knives, okay!?) It was also really nice to be able to test some of the knives out, but by the time I left I was wholly disenchanted with my own. Uhhh a knife store in Vancouver? Yes please! I got some great advice and service at the garage sale. Pete was the rep who helped me out (thanks pete!) and really expanded my limited knowledge on knives. The really fun part is the store provides the lineage of the knives, as in the story and history of the knife makers. Many of them used to make swords! pretty cool! the knives themselves are top quality. I ended up buying one knife and a ceramic knife sharpening tool (easier on the metal). They also have knife sharpening classes, something i will be trying in the future! read more

I was fortunate to attend the knife sharpening course at the Vancouver store on Sept. 22nd. The 4.5 hour drive to get there was worth every minute of the drive. All the staff are extremely knowledgeable, respectful and helpful. I learned a ton of good sharpening techniques, and also had them sharpen 2 knives for my daughter while the course was in progress. As an aside, when I arrived I was wearing a (favorite of mine) band T shirt and one of the staff was kind enough to play their music in the background. Talk about great customer service! Great service, best knife sharpening. They respectfully sharpened my dull cleaver for the purpose of removing plastic sheeting from our Main Street store windows. The cleaver was sharp enough to cut through paper when they were done. Worked like a charm! read more
