A very cool and rustic experience. We were here for a company event and it was spacious and remote, which was perfect for the group. There's a wonderful indoor space with plenty of picnic tables and a stage for a band or DJ. This space can be easily configured for dancing or other inside group activities. We had a delicious BBQ buffet that consistented of ribs, chicken and beef and some of the sides, loaded mashed potatoes, salads, cornbread and corn on the cob. Everything was so delicious! There is a great outdoor space for lawn games, outdoor eating and drinking etc. They also offered a tour of the space that could accommodate 65 people at a time. We didn't go on it, however, it would have been amazing to see the property at night. We did see several herd animals that looked like deer running across the long driveway. It's located in a very dark area - you could miss it if you are not mapping to it. The driveway leading up to the event space is also very dark. Drive slowly and carefully, as there are bumps in the driveway and animals running about. I would definitely love to return here for an event, and would especially love to see it in the day light. Without a doubt the best hosted location to get a fantasy view of the old Texas West. I came here for a business team building dinner and was reluctant at first. Left loving it. The grounds, building and location are all great hill country rustic ranch style. Superbly well done. Steer hides in the tables and longhorns on the wall. The bars and bartenders were great. In fact every person working here was fantastic and the owners/managers do a great job hiring and leading this crew. The food was beyond good. This was not some industrialized catered food. This was the real McCoy. Brisket was great, baked beans made me cry, wonderful salad, awesome taters, fantastic sausage. I loved it all. Even grilled corn! For dessert they had cast iron apple pie smoking hot with Blue Bell vanilla ice cream. If you want to do it right, do it here. read more

Came here for a corporate event with a little over 100 of my coworkers. Yes, it's a little kitschy, but they do a great job with the atmosphere, food, and most of all making sure everyone is having a great time. If your not from Texas, they do a good job with feeling like you are experiencing something uniquely Texan. If you've been sitting in meetings all day, it's definitely a fun place to blow off some steam. I would assume they have different packages that can be booked. It's a safe bet you'll have some Instagram worthy shots on top of a Texas Longhorn steer, an opportunity to a fast draw duel against that guy in accounting, and some interaction and rope tricks with some comedic cowboys. We had line dancing lessons and karaoke too. Buses pick you up right at the hotel and take you out there. It's about a 40 minute drive from San Antonio. Beer and City Slickers video clips included. Food was good. I wouldn't call it super authentic Texas BBQ, but there is lots to choose from, including non-meat options. Steak was tender, pork ribs tasty and it was definitely a step up from the food you usually get at a big catered event. The dining hall was amazing, with large square tables and plenty of room for everyone. The wood, stone and cowhide everywhere definitely helps keep the rancher atmosphere top of mind. Thomson Reuters AKA West hosted an appreciation party for hundreds of us at this venue. It was over the top and deff world class! Probably one of the best work parties I've been to. I'd give 10 stars if I could. Party attendees were from all over the US and worldwide including Australia, Canada, England, China, Korea, etc. The Knibbe ranch was a smart choice and a perfect place to show attendees Texas hospitality and what the hill country has to offer. The ranch was gorgeous and the staff were so welcoming. Decorations scream Texas. I'm not usually into country stuff but even I thought everything was so charming including the bathroom! Although I live in SA I had never heard of this ranch until our party. It's a bit far but the organizers had 20-30 buses to take all of us there. It was totally worth the drive. Upon arrival, each person was handed a cowboy hat and bandana. The party was nicely set up through out the ranch with indoor and outdoor seatings. There were abundant food, drinks and deserts. Even though I've been living in TX for over 5 yrs, I have to admit the BBQ brisket I had at Knibbe ranch was one of the best I've ever had. It was so tender and juicy. I couldn't stop talking about it. The out of towners at my table were all raving about it too. There were open bars for unlimited beer and wine. Dessert was peach cobbler. I've had them before of course but boy that peach cobbler at this party was off the chain! For entertainment, they brought out longhorns for us to pet and take pictures with, live music and dance. They even had rodeo show and barrel racing!! WOW! I'm not from TX so it was my first time watching a rodeo show and barrel racing! I couldn't believe there was a 5 year old girl racing!! AH-mazing!! And I got to meet two cute little cowgirls named Zoey and Presley and their horse Missy and Banana. After the show, the FIREWORKS started! Yes, FIREWORKS?! It was unbelievable. Deff world class!!! Awesome venue. Had a convention at JW Marriott nearby and dinner was held here. They brought a couple of bulls and sat them by the entrance. They were very docile bulls, and i suspect they must have ben tranquilized or something. The dinner was amazing. BBQ was good and all the sides very gourmet and hearty. Service was great, from the bartender with the heavy pours to ther servers providing the delicious meals. The grounds are beautiful with a creek running behind the building. We went to an event held by Best Buy at Knibbe Ranch tonight for the top sales people from all over the country and had we all had a blast! It was so well done!!! They had hayrides with tours on cows and native hunting, great music, games, amazing staff, Awesome Food (I ate so many ribs and the bread pudding was so yummy!), oh, and freakin' Rodeo with fire works! Yeehaw! And as for the restrooms... They totally have it covered with these nice, clean trailer setup thingies with stalls and clean sinks and the whole shabang. read more

If you are looking for a venue that hollers Texas- you've found your place. Located in beautiful Spring Branch, the event facility is about 30 minutes away from San Antonio. As you drive on their private road, you pass beautiful fields with grazing Longhorn cattle. A few rustic buildings provide additional ambience. There is a good-sized paved parking lot to accommodate many guests. I have been to this venue for two fundraisers for the Opera. We were warmly greeted at the large barn by a roping cowboy and a tame Longhorn steer. A relaxed patio worked well for cocktails and registration. As we entered the spacious barn, we marveled at the huge picnic tables covered with cow hides. The rough-hewn wood barn provided just the right ambience for the "Opera on the Ranch" fundraisers. The single room was large enough for all of the guests plus a large silent auction area. Before our delicious BBQ dinner, we were entertained by with gun and roping tricks. The boyfriend's work retreat weekend's finale dinner occurred here, and it was quite the Texan experience, to say the least. Yes, I know it's going to seem a bit contrived as Marriott owns this property and likely specifically designed and developed it to appeal to individuals seeking the typical Texan experience, but it was actually quite fun. The whole experience commenced at the JW Marriott San Antonio Hill Country Resort & Spa, where we all shuffled onto charter buses, equipped with water and beer-filled ice chests. The ride is rather scenic, through some of the hill country, as you are indeed headed to a more rural isolated area. The video prepared for the Knibbe Ranch is way cheesy and there's even a lengthy scene from "City Slickers" spliced into the presentation. Once we arrived at Knibbe Ranch reception hall/dining area (the ranch itself is ginormous, but we remained mostly where we were deposited), we were warmly greeted by the Knibbe Ranch staff with trays of wines, a pair of (poor overheated) Longhorns waiting for your photo ops, and a small enclosure of armadillos for your petting needs (aren't those suckers carriers of leprosy???). I was almost immediately assaulted by mosquitoes, so I ended up briskly walking around the reception hall to note that yowzer, this really did feel like a "ranch." I mean all ranches have a mechanical bull set up for bolder/drunk visitors, right? And how about that real live flickering camp fire with real smores for us to roast up! I found it odd that a staff member sat by the restrooms the entire night, but I assume that's part of the hospitality factor - in case something goes awry in the stalls because you know . . . open bar. Now I'm admittedly not really the country music type (shocker, right?), but the live band was pretty awesome. I remained mostly sober, in recovering mode, so I didn't partake in the two stepping, line dancing, whatever it was. The high ceilings and openness of the venue probably renders this a perfect wedding reception or massive celebration site. For anyone planning a western/country-themed wedding - Knibbe probably would be a most excellent selection. Oh, and I actually actively sought out a hearty snack of trail mix before we hopped onto the bus, motivated by my fear that dinner would be a massive meat feast, but two of the salads and one of the roasted vegetable sides were in fact vegan! The food was actually labeled with ingredients and/or indicated as "gluten free" or "vegetarian." Hurray! As for the open bar - yeah, I was recovering and my endless glasses of orange juice (from a bottle) were delicious, thank you very much. read more

Fabulous! Fabulous! Fabulous! I really don't know what else to say about both of my experiences at this wonderful gen just outside of San Antonio. My first experience was part of a corporate event where the family and team here made us feel so welcome, educated us on the ranch's rich history and fed us really really good food! My second visit was when I brought my family back to show the children the beautiful animals on the property and had the great fortune of meeting the owner and getting to spend a few precious minutes with this fabulous man! Knibbe Ranch stole my heart last night. An event space run by Marriott, and smack dab in the middle of a heritage cattle ranch, this spot was a FANTASTIC venue. Plus, if you're staying at the Marriott in Hill Country (as we were), you can master bill your event here back to the hotel!!! I didn't get a chance to meet Chuck Knibbe, but I heard great things about him, and I definitely love that this ranch has been in the family for over 150 years now. The venue space is perfect country ranch - rustic wood, wrap around porch with picnic tables, rocking chairs, fans, and the like. Tons of space for bars and barbecues and general merriment. We had Casino the longhorn up front for a photo op (the hardest working bull in the biz - he was out there for like four hours posing with our guests as they climbed on and off his back and posed next to his impressive horns); a lovely rustic spread in the main hall (with mason jars full of "wild"flowers and cowhide tablecloths (!); a fire down in the firepit for s'mores and campfire songs (and cigars and brandy), and even a fireworks display after the sun went down. There is even a little creek meandering by the meadow. The staff was great, the spot was great, the event was great. I would build a place exactly like it if I could. read more
