AYCE Hotpot. The selection isn't huge but it is enough. There is seafood, fish balls, tofu, veggies, noodles and meat. There are premix sauces and banchan. And ice cream for dessert. Make sure you try the hand pulled noodles. You get your own hotpot I chose the House Soup broth which was tasty on its own. After adding all the hotpot ingredients the broth was even tastier. It pains me to write this as I was truly excited to check out this place. I was in Koreatown and was looking for places to eat and this one had great reviews. It should've been a red flag already coming in with no customers in the restaurant, but I gave it benefit of the doubt. No issues with customer service as everyone was incredibly nice. When I was sitting at the table; I noticed a cockroach on the wall. Not wanting to alarm my parents I decided to ignore it. Thinking back, I really should have told them and gotten up right away because it made me iffy and anxious the entire time. Surely enough, my intuition was correct. After we got our food, I noticed the cockroach (don't know if it was the same one on the wall earlier or not) casually walking on our table where all our food was. Now I can't ignore it anymore and told my dad there's a cockroach right next to your plate. We flagged down the owner and told her about it. She was very apologetic and moved us to a different table and offered a discount to our bill. But during the entire time I was hypersensitive and on high alert for the bugs. This is perhaps my favorite shabu spot ever. The meat selection was plentiful, thinly cut, and arrived promptly. From thinly sliced beef to pork belly, the quantity and quality of the meat was unparalleled. The buffet was awesome as well. I have never seen such clean, fresh vegetables in my life (including my own cooking!). From bok choy to onions, the vegetables were beautifully presented and balanced out the meat and soup. I also liked the variety of noodles, and particularly enjoyed the home made noodles which were just the right thickness and texture to compliment the meat. Other sides included seaweed, kimchi fried rice, seafood, and more. There were multiple sauces as well to compliment the meal, along with tasty ice cream at the end. A good option for AYCE hotpot in the Memorial City-Bunker Hill-Little Seoul area with very reasonable prices, especially for lunch! It's a quiet and clean place, and the front still has the Noodle House. Our server was very friendly and helpful, and I believe the manager also routinely came out to check on us (she also seemed friendly). Compared to places in Bellaire/Chinatown, it has less options for sides, but I think the quality makes up for it. My ONE advice: DOUBLE UP ON YOUR MEATS! Kim Shabu is my happiest find of 2024 in Houston. This used to be a soup noodle place and has since been completely remodeled. It now offers - dare I say - the best individual hotpots in Houston. That's a bold claim given we have so many hotpot spots. So what do I base that on? 1. The variety of items. The seafood and veggie+ bar is impressively varied, and with 12 cuts of meat offered for dinner, Kim Shabu gives you permutations and combinations of concoctions between veggies, meats, seafood, carbs, and sauces. Don't skip on the rice cakes and the hand-pulled noodles towards the end. 2. The freshness. This is unbeatable. I don't know how they offer so many items and yet keep them all so fresh. I probably ate a pound of mushrooms and crown daisy each, and don't get me started on the meat. So fresh and so good. Such good quality. 3. The flavors. Both the House and Beef broth are delicious. While my pot tasted like really thick mushroom soup by the end of the meal, the broth was good from the get go. The sauces were also spot on. The avocado sauce was so good and spicy, and I also enjoyed the soy-based House and Ponzu sauces as well as the black sesame sauce. And the peanut sauce. And the ssamjang. I ate a lot of sauces. Service was also prompt. I'm really happy with this find! Edit: Turns out that I really disliked my experience here prior to the remodeling, but definitely go and support this new hotpot gig. This place never fails. Went in January and very recently with family and friends. Our visit in January was with a large party with some being vegan and non vegan. It was a wonderful experience all around. They have plenty of vegan options here and highly recommend for anyone wanting those options. They have no problems answering any and all questions as to what is and isn't vegan. The meats are always fresh, as well as the buffet. Hands on my favorite place to go and always highly recommend. Previously Korean Noodle House, Kim Shabu is a lovely family-owned hot pot joint out in Spring Branch. The clean, minimalist decor as well as the unassuming menus are endearing, but don't let that fool you - among shabu shabu restaurants, it holds its own against more bombastic peers in Chinatown and Katy. Here are my thoughts on our experience: Meats and soups: For dinner, choose from any of the 12 cuts on the list, of which 9 are beef, 2 are pork, and 1 is chicken. Everything we had was fresh and well-portioned; I loved seeing all the beautiful trays hit the table at once, then stacking them up high as we devoured slice after slice of meaty goodness. Most of us ordered either the deeply rich house broth or lightly savory dashi soup, which were also both excellent and complemented the shabu shabu options well. Buffet: You'll find your typical selection of Asian veggies, shellfish/seafood, tofu, mushrooms, and noodles out here. Reflecting the restaurant's Korean roots, you'll also see an extensive banchan station (I wish the kimchi had gotten refilled)! The sauce bar has both prepared mixes and basic essentials for you to create your perfect dip. The dessert and hot food sections were fairly limited, but you're not here to eat too much of that here, are you? Service: Our server was quick, efficient, responsive, and attentive - perhaps more so than at any other hot pot restaurant I've been to! On the corner of a strip mall, this hot pot place isn't huge but can seat parties of two to larger groups (there's a separate room with big tables). Each person gets their own pot and it's one price for AYCE - with discounts for senior citizens (10%) and kids under 4 eating free. Broths are House (chicken, beef, pork), dashi, beef, pork, chicken, miso or veggies. I went with the house but honestly - like with most hot pots the flavors at the end are all muddled. The have a buffet bar with the most neatly stacked and assorted vegetables and items for your hotpot - including kimchis etc. They also have a section for rice and some items that go well with rice . . . and a separate area with fruit and a whole ice cream section. Meats are very very thinly sliced - which means they cook in a matter of seconds. You can get two plates of meat per person (roughly 10 pieces), but you'll likely need to order some more as you go. Staff was so courteous and helpful and very kind. We even got some candy canes since Christmas was just around the corner. This place is definitely a bit of a neighborhood gem. read more

But the broths are not super flavorful (which is probably suitable to Korean people's tastes), and they don't have crab sticks!!! which is big for me. I realized that I had been to this restaurant when it originally was a Korean noodle house several years ago. The restaurant itself looks like it was a complete remodel. The inside was beautiful with so much white and marble, simplistic walls and cute quotes on the wall and even a wall for pictures! We were seated fairly quickly since it wasn't a busy time on a Saturday that we went. Looking over the menu, there were 4 broth options we could choose from which were fairly basic broths, nothing original compared to other hot pot places. However their hot pot options were very unique. There were variety of pre made kimchi fried rice, regular fried rice and noodle dishes on one side. then more options of seafood, veggies, and dipping sauces. there were several pre made dipping sauces that anyone could pick from or some options to make your own but didn't have everything like low-sodium soy sauce or fish sauce options. I picked 2 plates full of veggies, and seafood/fish balls. We ordered 8 plates of meats to start and once we finished a majority of the meats then we ordered more. Service was good also! Our waiter was attentive and came by several times to pick up empty plates and made sure we didn't go empty on meats until we were truly done ordering. I said to myself, I've gotta come to support the restaurant (Korean Noodles House) I used to love. I came here to see Korean Noodles House sign still in top of building but windows are decorated with Kim Shabu. So, you asked. What's Korean style shabu? It's individually served shabu pot with Korean entrée and Korean sauces on the buffet line. You have to order sliced shabu meats from the servers. I'm not a meat eater. I indulged myself with clams, mussels and fish balls. There are also shrimps, crabs, baby squids, calamari rings as seafood selections during lunch. I'm curious what's served during dinner. I normally don't rate a business during soft opening. But this one is different. My followers will ask if I have tried Kim Shabu because my review on Korean Noodles House was featured before. I had to share my report. Service was excellent Food was fresh and appetizing Ambience was well decorated with modern look (I missed the old fashioned Korean Noodles House though.) Sauces are prepared in house. I recommend do not mix. Sauce #1 is slightly spicy. Sauce #2 is little spicier and with lots of sweetness. They have a split schedule (11 - 3 p, 5p - 10p) so 5:15p was perfectly quiet. They picked up around 7 pm. It's shabu but Korean style. They have an assortment of options. Veggies: bok choy, spinach, napa cabbage, sprouts, assortment of mushrooms, chives, zucchini etc Seafood: shrimp, clams, mussels, squid, crab, fish balls (various types) Other: tofu, corn, fish cakes, lotus, seaweed, onions, eggs, ramen, udon Sauce station, kimchi station Section with fried rice, kimchi fried rice, steamed rice, stir fry fish cakes, spicy fish cakes There are 12 assortment of meats for dinner (6 for lunch) There are 7 different broths. (House, dashi, pork, beef, chicken, miso, veggie) And they also have hand made noodles (on the menu, you have to order - small portion but delicious) and at the end they use your broth to make Korean porridge. (I highly recommend) They also have fruit and ice cream for the end (if your belly has space) They serve various types of alcohol, soda and ice teas. The food was delicious. This place used to be Korean Noodle House and is now a Korean hot pot place with individual pots, which I much prefer to a shared pot. Restaurant interior is clean and simple. Service was good. Menu and food-wise, it is very similar to Shabu Zone in Asiatown except fewer buffet items. The broth and meat options are good but I wish they'd slice their meat into larger pieces. Also wish they had lamb, which is my favorite hot pot meat. They're still very new so not sure if they're planning to add more items to the buffet. The main buffet has two sides with practically the same things. I feel like it'd be better if they added different things to the two sides to increase variety. The house sauce is delicious, especially with green onions and garlic added, but wish they had more sauce ingredients to make bigger variety of DIY sauces. Ordered the Soft Tofu with beef soup. They don't have the typical panchan like other Korean restaurants. They only had Kimchi... pretty sure it was home made. It was spicy but not too spicy or salty. The Soft Tofu with beef hit the spot. It came out boiling and rice was hot as well. Soft Tofu had shredded beef and egg as well. Soup was tasty. We were craving Korean food and decided to stop by here for some soups. The place is really cute and charming, and was more like a mom and pop shop. They also give out a small container full of complimentary fresh kimchi to pair with your meal! I got the Spicy Seafood Noodle Soup, which was really delicious and impressive, with jumbo shrimps and mussels plenty. It was really flavorful, more on the mild side but was really good! I will say I am sad to see Korean Noodle House go but I was excited to try Kim Shabu. Here is how I like to rate Shabu Shabu and here are my ratings for Kim Shabu. Meat: 4.5/5 Broth: 4/5 Veggie and fix ins: 3.8/5 Sauce: 3/5 (might be my fault bc I don't have a good sauce recipe) Ambience: 2.9/5 Going into a little more detail, the meat quality was pretty good compared to Shabuzone. I ordered the signature broth and it was pretty tasty. However I think it had a lot of salt in it because I was feeling very swollen the next day. The variety of veggies and fix ins was a little limited. As far as sauce, I don't have a go to recipe for Shabu sauce so I didn't love the one I made. I do think they should've kept Korean Noodle Houses design and decor because I don't like the white stucco and carpet. They were also very nice but when we went they took a very long time to bring out the meat. Maybe they were cutting the meat as we ordered which is why it took so long. With renovations of becoming a hotpot place it isn't too bad. Ample amount of parking and attentive service and staff. Food I got the house soup which is made from beef and pork. Very clean tasting perfect for layering your meat and veggies for added flavor! The meats were good for people who have a small appetite. Each time I order a portion I order 2 servings just for myself. My favorite cut was the beef belly because it was flavorful and had a great mouth feel. They had multiple house made sauces at their sauce bar. For dessert their ice cream selection was quite impressive, they had matcha, red bean, coffee, vanilla ,strawberry, and chocolate. In addition they also had a variety of fruits such as watermelon, tangerines, and grapes. There were only two waiters and the owner-operator working, but they did their best to hustle and make sure all of the tables were taken care of. +The shabu broths had a good umami flavor, and not too overpowering, which we liked. We got the 'house', beef, and pork broths. You can get these broths in house spicy or mala spicy versions, as well. +The restaurant was fairly clean and the self-serving stations were kept clean. +The beef quality was good. +The veggies were fresh and looked thoroughly washed. We had to pick out a few flies, but overall it was edible. As long as there are no roaches or big bugs in the hot pot veggies, it's understandable that a few fruit flies/gnats get missed during the food prep process. +The knife-cut noodles and porridge are a game-changer! Make sure you order both. These two menu options are unique to this shabu shabu establishment. +They utilize Yelp's reservation system. +Something about the flooring of the restaurant I liked, as it was a non-slip texture. The seating/table layout is a little crammed, but it works for the restaurant space. Hopefully, they can expand to other locations! -The hot food bar could use some improvement, to increase the tray turnover and not let the foods sit there the entire night. Maybe build out a separate hot food bar section on either side of the restaurant space? Add some items for kids; e.g., fried mandu, tempura shrimp, etc. -Other hot pot restaurants; i.e., Haidilao, skim the broth scum for you, but you'll have to do it yourself at this one. Just grab a bowl from the buffet bar and defoam with your spoon, it'll just take a few scoops. -No refills on soft drinks. -No loyalty rewards program. Maybe they could add some gamification via customer phone number history? For example: 3rd visit = free soda, 5th visit = free beer, 7th visit = 20% off the entire check, or run a points system where you can redeem for secret menu items (seafood pancake, tempura basket, etc.). As long as the veggie and meat quality stays above par, we will keep coming back. The broths are very clean and refreshing, if you aren't into the traditional Chinese or Japanese broths that may have much more adventurous seasonings and spices.
