Their specialty is flavored cheeses with condiments included in the cheese. While I am a bit of a purist, I find it a good choice for them to have created a niche for themselves so that they can stay ahead of the curve. They have, however, created a reserve cheddar that is quite nice that we got to try. Hopefully we will be able to get the Eagle Cave reserve soon in the PNW. This creamery is also a carbon creditor through its use of woodchips to create steam to heat the pasteurizer. Or somthing like that. All I know is they are very environmentally concious so good on them!

The co-op also helped me out too since there was nothing to have for breakfast and my hotel. Great hours! The only kind about this place really is that it lacks some selection and it is pretty pricey. I do really like how they post all the community events too! Clean restrooms!

Naturally, they specialize in Goat cheese. I've noticed that they strive hard to produce milder goat cheeses (no doubt to please the local palates). So if you prefer more subtle cheese, you've no need to fear this place. They do also have cows milk cheeses, and one or two sharper goat cheeses too, and don't forget your goat milk butter! Overall this is a good place to stop and get some cheese, but I haven't been blown away by any of their products myself. Still, it's tops in this neck of the woods, and worth a visit to support smaller family farms working together to make natural products.
