    No, I won't.

If you're in Ashgrove and looking for a starting place, before you hit the main hubs in the city or Valley, make sure you put aside some dollars to go visit the Junk Bar. One of the advantages of the Junk Bar is that is on the same corner that a number of busses leave from. From the outside, with the sole security guard at the door, it looks like there's a well-guarded secret inside, like something clandestine is underfoot. Stepping through the doorway, the atmosphere, with its low-lit tables and retro fitted patrons instantly makes the Junk Bar an intriguing place to visit. The interior, or at least the shape of it, looks like an old Chinese restaurant that has been taken over with second hand chic furniture and decorations circa the 1950s. There are dark little alcoves spread though out to immerse yourself in and with the lighting to a minimum a moody yet artisan feeling hangs in the air. On the tables, an array of glasses all shapes and sizes sit, their elixirs helping to increase the volume bouncing within the walls. If its packed, you may have to wait to be seated, there has been an occasion where I've experienced this. As frustrating as it was, the payoff was the selection of cocktails at reasonable prices that I got to explore. No wonder why people were taking their time. Time passes fast in the Junk Bar and after a few whiskey sours you may want to check your timepiece so you don't miss that bus. However, if you do, the other option of staying put is just as satisfying.

If a friend had not told me exactly where Junk Bar was, I never would have known where to find it. This tiny hole in the wall joint is tucked away in the suburb of Ashgrove. It looks little more than a door from the outside but stepping through the curtain is like entering into a new little world. With quirky decor including deer antlers, forest wallpaper, small palm trees, you really feel as though you have escaped Brisbane. A very secluded and cosy atmosphere is created through the eclectic couches and dim lamps, while the music stems from vinyls played on an old record player. Junk Bar is a table service cocktail bar. Seated in a small couch in the corner, the hostess was extremely friendly and attentive and produced an impressive cocktail and drink menu for my perusal. And once I had chosen, the cocktails I tasted were amazing and well-priced for the quality. This is definitely a place I would recommend for a completely different Brisbane bar experience. While off the beaten track a bit, Junk Bar is worth the trek to Ashgrove. It really is like stepping into a magical new world, one I would happily get lost in for hours.

This is important to note for reasons unknown. Once underground your modern-day dress almost felt out of place and more akin to an Evelyn Waugh novel. Perhaps you'd be sitting across from a Mitford sister, or some other Bright Young Thing. It all felt a little bit Midnight In Paris when Woody Allen's script sends Owen Wilson's character back to the roaring days of Hemingway. The Walrus Bar (you'll have to visit to answer the question, "Why Walrus?"), headed by Krystal Hart (recently crowned Diageo Reserve World Class Bartender for 2013) and with support behind the bar from some of this town's finest (including a few familiar faces from Canvas), is home to some 300 spirits; rum; cheese and charcuterie and 30 Cuban cigars. As well as my usual cocktail friend (Southsides), I happily sipped on an Indian punch (Panch Phora Punch) which was a rich and seductively easy to drink. This is a rum bar primarily and the majority of lighting within the bar is from the glass cabinets containing every rum you could imagine. Of course, it is never wise to enjoy such decadent drink on an empty stomach and The Walrus have you sorted with a menu of small plates. The Walrus Bar has to be seen to be believed so rather than me waffle on any further - just visit this underground lair which you'll forget resides underneath The Regatta.

Romance, cocktails and good food were required but my Yelp-fu had yet failed to lead us anywhere particularly good. As we wandered down Surf Parade we realised our options were slim. Koi Restaurant looked very full and the menu was promising but we were politely advised there would be a 20 minute wait for a table. Next door we scoped out Bin 89 and managed to snake a couple who took a few more minutes perusing the menu. We knew our options were closing out fast so we made a dash to land the last table in the whole place. A pokey little two-seater right next to the service desk. Not ideal, but we were smug. The wait staff were welcoming and quick to offer us water and menus. We were able to order cocktails quickly. I had the Purple People Eater which was initially a little strong, but mellowed with the melting ice and the boy had a red wine served in a mini-caraffe - I don't know if it was the sheer size of the glass, but it looked like a teeny tiny serving. We decided quickly on our food order. I went with "small plates" of salmon mousse (served on a half shell), beef taco and salt and pepper calamari. I have a small appetite at the best of times and being gluten free, I had limited (but clearly labelled!) options. The boy went with the rib eye fillet and red wine jus with mash. Very manly (and typical) of him to order meat and potatoes. My salmon mousse was to-die-for. Like, lick the shell clean good. I was making very raunchy noises and my date had to tell me to tone it down it was so fabulous. I considered ordering a second, but remembered I had two more dishes coming. The calamari was so-so. The mayonnaise was fine and creamy, and the batter wasn't too thick and had the right amount of crunch.. the squid was soft and not rubbery at all it was just.. boring. And oily. And very meh. Then the taco arrived. It was a thing of beauty. The shredded beef was spiced to perfection where my mouth felt slightly warm but not obnoxiously hot. The accompaniment in the soft corn tortilla cut through the heavy meat and added delicious texture. I regret not recording the description somewhere as I really have no idea what ingredients they used. Too many cocktails before dinner perhaps? Regardless I enjoyed the ambience, wait-staff and menu items so much I want to go back immediately. Or whenever we have an excuse to spend a weekend on the coast and dine out.

It's such a beautiful space, from the 7.5m brass bar, custom glazed porcelain lights, back lit shelves, & a charcuterie cabinet at the end of the bar (which will form the basis for a very simple menu in the coming weeks). Maker's menu has a strong focus on Australian wines, beer, and spirits; with the sophisticated cocktail menu an adventurous interplay of flavours, like nothing you'll find anywhere else in Brisbane.Prepared with flair, artistry, & unique techniques, having a cocktail at Maker is a feast for the senses. Try the "Whisky Wax Coffee", a combination of Whisky, coffee, beeswax, pollen, macadmia ($22), and watch how it's prepared. Served in artisan glassware with sphere ice-cubes, & some of the famous black garlic bread from Gauge. We also tried the Starward (Australian) whisky as well as another cocktail not on the menu. It's one of the main benefits of being in such a small bar, that one can have meaningful conversations with the bartender, request a cocktail based on your particular flavours, adding to the overall bespoke experience. Maker has arrived, and it is a game changer.
