I ordered the "guiso plate" and was told I could choose between hand made flour or store-bought corn tortillas. I prefer corn, so I was promptly served the carne guisada along with corn tortillas (which were quite good). The carne guisada had more of an American gravy texture and taste than most carne guisada I have had in Mexico. But I slathered the salsa over it and that pepped it up.
