Food trucks can always be hit or miss with the wait time, food quality and prices. I think that Busan Bop does a fine job with their food and menu but my particular choice of food wasn't so impressive I would order again or even from this food truck again. My coworkers and I were incredibly excited that this truck was going to be at Vanderbilt's staff appreciation event. Most of us intended to order the bibimbop but by the time we got to the front of the line they had sold out of the bacon fried rice and the bibimbop. I ordered the japchae with the beef brisket. The beef brisket was the best thing on that dish. The rest was a little underwhelming. The vegetables in the dish (mushrooms, green onions, carrots and red peppers) were sparse and the noodles didn't retain any of the flavor of the sauce they had sauteed it in. The kimchi on top of the dish added some more flavor and spice which I enjoyed. They did give hot sauce out to us when we asked for it as well. I think if I had gotten to try the bibimbop I would've enjoyed it more. The japchae was not very filling nor satisfying but the taste and flavor was pretty good.

Busan Bop is a small food truck with a limited menu that packs big flavor. Offerings include…read morejapchae, a sweet potato glass noodle dish, and bibimbap, a rice bowl with veggies, and poached egg. Both dishes can be served with spicy chicken, Korean bbq beef brisket, and sauteed mushrooms. The truck owner noted that she sometimes adds other dishes to the menu as well, such as kimchi fried rice with smoked bacon. For drinks, the Bop offers sodas, Korean specialty drinks, and peach tea. I was lucky to find the Bop near my workplace to test out the food. I ordered the japchae with spicy chicken, which was short-cut sweet potato glass noodles cooked perfectly in a tasty sauce with a variety of vegetables. The sauce is more cooked into the noodles than it is poured on top. It had less sesame oil than what I was used to in japchae, but it was still quite delicious. The spicy chicken was not very spicy at all (I asked for it that way). I imagine if I had asked for it to be spicier, she would have been able to make it so. The peach tea, which was a black tea that seemed to be sweetened and flavored with peach juice, was the perfect companion to the meal. A coworker ordered the bibimbap, and it looked delicious as well! If you have the good fortune to stumble upon the Bop, definitely give it a try!

So I made a quick detour just a few minutes from the studio to this little spot tucked next to a smoke shop and food truck. And you know what they say -- sometimes the best Mexican food comes from spots that don't look fancy. That proved true here. The birria tacos were solid -- cheesy, flavorful, and nicely crisped. Not the best I've ever had, but definitely satisfying. What really stood out though was the al pastor mulita -- that thing slapped. Super savory, well-seasoned, and worth coming back for. The horchata on the side hit the spot, too. It's a no-frills, order-to-go kind of place, so don't expect much ambiance. I ate in my car and still left happy. Service was friendly, and the menu had plenty of options to choose from. Bottom line: If you're nearby and craving tacos, this place is worth a visit. Nothing over-the-top, but solid food at a good price.

Sadly, tonight I was highly disappointed in the quality. It's Good Friday and everybody was out and about and they were swamped. When I approached to order they stated it would be 30 minute wait. The food truck park is located adjacent to PLP on Brick Church, and while it shares a lot with the doggy daycare, it features its own entrance, parking and unique space outfitted with several food trucks, seating, activities and plenty of open space to mingle, checkout the trucks and just enjoy yourself! The park is open Thursday to Sunday, 11a - 7p each day, and has a daily rotation of food trucks of all varieties. On my first visit in, I honed in on and made a b-line to NashBrew Coffee! Was a great pick me up while I waited in PLP to bring out my little dude from daycare. Today's line up was from coffee to dessert to savory sandwiches. I only scooped up a coffee, but the other trucks looked great! As noted, they have a great space to sit and stay, pun intended. There are lots of tables and given their proximity to PLP, they not only welcome bringing your pet, they encourage it! Overall, really cool space to have in the neighborhood! Excited to see what delish trucks become part of the rotation!
