Located right in the main square of Plaza Nueva in Bilbao, Iturriza offers pintxos and raciones of classic Basque cooking. Almost everything on the menu can be ordered in a 1/3 racion size, making this the perfect place to sample a ton of dishes. The Bacalao con pisto were chunks of cod fish served in a tomato-based sauce of vegetables like onion and zucchini. The Carrilleras de ternera were the most tender stewed beef cheeks in a savory, unctuous, meaty sauce; and the Albondigas en salsa came with two beef meatballs along with fried sliced potatoes in a savory green sauce. But my favorite dish (though not by far) was the Txipirones en su tinta, or baby squid in squid ink sauce, which had a deep, savory, seafoody flavor. Each of the sauces that came with these dishes was distinct in flavor and preparation, but the uniqueness of the squid ink sauce really took the cake for me! And in addition to the menu of Basque specialties, the display of pintxos behind the counter was simply irresistible too, and I tried the creamy goat cheese topped with a pepper marmalade; and the crab salad, which was topped with a skewer of shrimp "tempura." But again, it was the pintxo made with squid that impressed me the most: the squid croquette was a ball of squid ink breaded and fried to perfection, topped with a skewer of a small baby squid. The squid ink croquette was so creamy and had a wonderful savory flavor--much like the squid ink sauce that came with the dish of baby squid, but even better! Overall, the value for the food here was unbelievable, given the variety of selections and despite this restaurant's location in the main square.
