His prices are extremely fair considering the fantastic job he does. I highly recommend his services. He's a magician when it comes to making knives the best they can be. You'll always be pleasantly surprised and treated courteously . Nice job Josh. I have more knives coming your way.

Josh was amazing to work with I found his website about 9+ months ago. Gave him a call and spoke…read morewith him for about 45 minutes about my knives and the services he offered. He took the time to answer my questions and educate me on the geometry of knives and the difference in his sharpening methods, as compared to his competitors and the difference between my different knife styles (Traditional VS Japanese). Due to an unfortunate mishap the 1st time I got my knives professionally sharpened (they were ruined and replaced by shop), I've been very leery when finding someone new. Through our talk and his website I felt comfortable with his services, but as life often does it got in the way and it took me almost a year to send my knives in. We sent in 3 Viking, 3 Shun, and a set of Kershaw kitchen shears. He emailed us when he received them. Called us with different sharpening options, and emailed us when they were sent back out. He also answered my 3-4 emails I had in the interim within an 8 hour period. All of the knives prior to being sent out couldn't cut a regular sheet of printer paper. After I got them back they could all cut a piece of paper from the telephone book which is considerably thinner. Hands down the best service, I wish shipping was a little cheaper (not that he can help these cost), but I felt his prices for sharpening considering the turnaround and quality are very fair. Try Josh's services out, you won't be disappointed.

X-Calibur is the second knife sharpening service I have tried since arriving in the Asheville area…read moreearly last year. Wow! I took a half dozen good German cooking knives over there to be sharpened, dropped them off while I shopped the farmers' market, and they were ready by the time I was ready to leave. I think they may be sharper now than when I bought them. Just an outstanding job. And at a price that was lower than the first place I tried. I'm very happy with the results and the value, and will try to make it habit to get all my good kitchen over to him on an annual basis. Very highly recommended.

Anyone who has worked in the food service industry kitchens, be it line, prep, sous, or even…read moreexecutive can testify: your knives are your job, and the lifeblood of cooking. Not only can dull knives ruin ingredients, they are far more dangerous than the average layman realizes. This is why there are so many sharpening services that cater directly to the chefs and cooks in the industry. But, what if you just cook at home? What if your knives are starting to wear and become a little on the dull side? Where can you go? What do you look for? Here's what I advise: look for a place or individual who works openly; by this I mean you can see his grinder, of which there should be at least two; three if they're really good. Secondly, they don't mind you seeing/watching them work. If all they do is take your cutlery to the back, and say to come back in a day or two- go elsewhere. And thirdly (but optional): they give you a demonstration of the sharpness- both to proof their work, and demonstrate the edge of the knife. And lastly, they offer a guarantee to their work. This is not only what you should look for and expect, but it's the level of service that you'll receive if you utilize the services from X-Calibur. X-Calibur owner, Scott Jennings, knows the importance of both sharpened utilities, as well as the value of good quality cutlery. He'll examine each item, determining what needs to be done, and how long it'll take. If you have only one or two, stick around and watch Mr. Jennings work his magic, but be forewarned: he's so good at what he does, you'll think "That's easy! I could do this!", but just like Buddy Guy playing guitar, it may look easy, but it's years and years of practice and experience that got him to being able to do his craft with ease. At the time of this writing, his prices are quite reasonable, and meets all the above-mentioned criteria. So please, take my recommendation regardless if you just cook at home, or work in a Michelin-rated establishment: Try out and use Scott Jennings/X-Calibur for your sharpening needs. You will not regret it.

They explained the process of making knives to us, and were able to give suggestions on which knives would be best for kitchen tasks (this knife for cutting meat, this knife for vegetables, etc.) Hearing the excitement in their voices and watching their eyes light up while explaining the processes to us truly makes the experience that much better, as it made us lock in and engage in fruitful conversation with them. We only stopped learning because we ran out of time and had to go to our next stop! If you stop by while on vacation, they are able to ship these knives to your home, FYI!

They were quick to respond by text, saying they were able to sharpen the machete that day. They're located smack downtown in Asheville on a side street (Eagle St) just off Biltmore Avenue. Parking was tight, but I was able to pop in, greeted by two very affable, friendly and welcoming employees (I assume they were owners, since they were so willing to take care of my job). The gentleman with whom I had been texting told me he'd have it ready in about 30 minutes and suggested I grab a cup of coffee and come back. The job was done excellently, and the young woman at the counter checked me out in no time. I live in Greensboro, about 2.5 hours from Asheville, and I had been unable to find any hardware store or other business who could take on the job, so this was a great place to get the job done (I was going to be in Asheville anyway, so I didn't make the trip just to get the machete sharpened). I enthusiastically recommend this local business. They have a very upscale operation and know how to take care of customers, plus they know their knives!
