We allotted enough time to head up to the North Shore and it was easy to find this location thanks to the clear directions in email. I've wanted to learn more about the bees for a long time and what better way than to put on a get a private tour where you get to suit up and get a fab lesson from Katie and team on the ins and outs of the bees working hard at making honey. Our tour was about 2 hours long. We were in awe of how hard the beekeepers and the bees here work. We even got to see another bee robbing another bee on site! And saw how to get the beetles out of there! I was pleasantly surprised by how easy it was to get the right sized suit. And they are super nice about taking photos for you!!! The tour ended with a honey tasting and charcuterie board with mint infused iced water! Then we were off to the gift shop which had all the flavors available for tasting -- we loved the hot honey. This TOUR IS A MUST and it is so easy to schedule through their website as they have so much availability 6 days a week.

They are near the top of the winding road down to Waialua, before the experimental farm. We hit it at the right time because the owner was experimenting with dark chocolate truffles that day. Oh my, they were so delicious without being sickeningly sweet! In fact, the truffles were so satisfying, the bite size was totally enough. We bought truffles and chocolate tea! Stopped again weeks later to buy 70% ultra-fine single estate Hawaiian dark chocolate bars. Totally worth the cost because the chocolate is so rich and flavorful. The man working when we arrived was the beekeeper and told us all about how the honey is made and what makes it unique. He was also selling chocolate on behalf of another lady and was knowledgeable about her products as well. In addition to chocolate bars of various cacao percentages, they also sold cocoa tea and and chocolate perfume. The perfume did smell like chocolate which was interesting. But the reason I came was the chocolate! The 70% is their award winner so though I usually go for the darkest I can get, I opted for the 70% this time. The price is pretty steep at $15 per bar (and the bars are much smaller than a standard size) but I couldn't come all this way and not get one. I eat my chocolate slowly anyway so it seemed worth it. I loved that they had tasting notes displayed and I grabbed a picture so I could look at it while tasting my chocolate later. While I was advised to let the chocolate sit on my tongue and melt for best effect, I preferred chewing it; I felt like I could taste more. It does have a distinctly roasted taste with solid fruit notes. It was not the best chocolate I've ever had but it was solid. I'm happy I had the experience but probably won't come back. It's just a tad pricey compared to other spots. But it's a fun spot and find on the side of the road on the North Shore!

Every Saturday morning feels like a reset for the soul. It's at the old sugar mill Saturday's 8:30-1:30. No early birds! You have to wait until 8:30 to shop, no exceptions. It's a smaller market but great local vendors with tons of local produce. They also have a few vendors with local crafts, jewelry, soaps etc. One of my favorites was the local peanut butter-- definitely recommend trying a sample from them! It is a dirt lot and can get a bit dusty. It also gets hotter later in the day- I def recommend trying to get in as early as possible for best selection and weather.
