I've been to a few of the other locations, but the Handboogstraat spot just hits different. It's…read moregot that dark, slightly chaotic, "rariteitenkabinet" vibe that makes you feel like you've stumbled into a hidden club rather than a burger joint. We kept it classic this time: * The Ribs: Fall-off-the-bone tender as always. They don't over-sweeten the glaze, which I appreciate. * Le Cannibale Royale: The pulled pork on top of the patty is a heavy hitter, but the sauerkraut actually cuts through the richness perfectly. * The Fries: Still some of the most consistent in the city--thin, salty, and actually hot. Service was busy (it's Handboogstraat, so what do you expect?), but the staff was super chill and kept the craft beers flowing. It's loud, it's moody, and it's exactly what I wanted for a late-night feed. Plus, I've noticed they actually take the time to read and reply to feedback here, which is a rare find for a place this popular. Keep doing what you're doing!

Busy lunch hours seemed to be dropping off around 13:30, about when I was there. It's possible there's an upstairs, but it was roped off on my visit. I decided to go with a unique combination, an unconventional choice, with the "Silence of the Lambs" burger, a patty made out of lamb, topped with goats cheese and sautéed onion. There was just one guy manning the register, and one lady cooking in the back. The first bite was divine, but towards the end I found it to mellow out to a rather neutral impression. I'd like to have tried a beef burger, and was contemplating the Dragon, but when in Ams. Worth a try, if convenient to do so.

I ordered the cheesy freak, my daughter ordered the silly cheesesteak and my other daughter and hubby got the classic plus we ordered a side of roasted potatoes. Our burgers were cooked PERFECTLY to medium rare! The three cheeses were so nicely melted and complemented each other beautifully. The burger was juicy but somehow not greasy! We realized this just be the difference between American beef and grass fed Dutch beef! And the potatoes were to die for! I do not typically like roasted potatoes, but these were perfectly seasoned and perfectly cooked so they were slightly crispy on the outside and soft on the inside. The service was spot on! When we walked in, there were not enough seats, but the staff took our order, and assured us that there would be seats by the time our food was ready. As soon as other patrons finished their meal, the staff called us in from outside to come and take our seats. Minutes later, our meal was delivered! They were so friendly and accommodating to us and made conversation. The vibe is very inviting and cozy. It is amazing that they were able to rotate all of the patrons in and out in an appropriate amount of time. I loved the music too! I am so glad we came here! It was a perfect end to our visit to Amsterdam!

Everything was cooked fresh and just overall delicious. Service was great and the staff are friendly. Would definitely come back!

The fries were good but not very hot so not my favorite. The servings are huge and the food was pretty good but it is a bit pricey for the area. The ambience was good, standard for a burger joint.

Well, tonight we tested out this aggressive statement to see if it was true or just a marketing scheme. The front of the Burger Bar was illuminated in big red bold letters and the giant wedge fries were proudly positioned in the window for customers to salivate over. We pondered the wall menu for a bit then ordered the Classic Burger with fries and a soft drink combo. The chef tossed a big beef patty onto the flat grill and waited at a wooden table out front impatiantly about fifteen minutes. OMG, it was big, juicy and spiced perfectly with bacon and caramelized onions (see pic). The oversized seasoned fries went well with the burger. I'm hoping that every burger joint in Amsterdam will be as tasty as this great find today.

I believe the level burgerdom at Ter Marsch is good quality - yet mediocre in taste. The bun is stale. At least mine was. I'm not sure if it was intended to be in that condition. The burger is thick and juicy, but lacking in the fresh beefiness that I wanted. What sets it apart is the aioli sauce - really top notch. The lettuce fell out. Shredded lettuce would have been better. The problem was the hockey puck burger sat high in the middle of the bun. When you bite into it, you get a mouthful of bun, and the hockey puck gushes out the side. If you bite into the hockey puck the rest of the ingredients gush out the side and down your hand, and you're left with disintegrated stale bun pieces. Sweet potato fries were ok, and the truffle sauce sent it over the top. But honestly, it's middle of the road in Southern California Burger Land.
