I had the privilege of meeting the owner, who graciously shared her vision for the restaurant's exciting future, including plans for an elegant new lounge. She personally gave me a tour of the establishment, making me feel less like a guest and more like family. Then came the food. I was introduced to the legendary Chef France, whose reputation as an executive chef to the stars is well deserved. I also had the pleasure of meeting his talented sous chef. Every dish that arrived surpassed the one before it. The evening's standout for me was the Haitian akra--crispy codfish fritters bursting with perfectly balanced Caribbean spices and flavor. Every bite was a celebration of culture and craftsmanship. A couple of glasses of Pinot Grigio paired beautifully with an endless parade of remarkable small plates, while the soft rhythms of Caribbean Afrobeat created the perfect backdrop. The music never competed for attention--it simply embraced the experience. The most remarkable part? They had no idea I was coming. There was no special preparation, no fanfare.
