Is there a Japanese restaurant in Manila that takes you to an exclusive enclave of dining? Yes, there is, and it is called Ginza. It was my first visit to this cozy spot in Makati. On walking in one sees the dessert case. The restaurant is in a small space with exquisitely set up tables. The service is not only attentive, but friendly and timely.
I started with the clam miso soup. When in Manila one has to have Manila clams. Perfect temperature, fresh taste, but a meager content of clams. Torched oysters were superb, they melted in your mouth with a good body and texture. However, there was no evidence of torching or charring. Then came the chicken yakitori. Nice optics, great grill taste, but over done and dry.
Salmon sashimi maki was excellent with an optimum blend of flavors. Shrimp tempura contained the largest meatiest shrimp I've had in a dish of this type. Its outer crispness and crunch did not disappoint. Tuna sashimi and salmon sashimi was fresh, soft and with a bite that dissolved in your mouth.
