Their mechanical approach to harvesting is more sustainable than traditional methods and produces a clean, consistent product. They're the only area farm producing Tokepoints and Baystones; both varieties are pearlescent, flavorful, and deep-cupped. They also work with native oyster species, which is practically unheard of in Washington's aquaculture industry. Plus they find ways to give back to the community and partner with the local tribe. I'd love to see more businesses like theirs in Grays/Pacific counties. Note that Shoalwater is a farm and merchant, not a restaurant. You can buy their oysters online or directly at their farm in Tokeland. They're also a micro operation, so if no one answers the phone, the husband and wife owners are probably tending to the million other things that an oyster farm requires.

The shop is clean and tidy which is important when dealing in these kinds of perishable ingredients. Once I left, my wife and I headed out to the beach to make lunch. I shucked the oysters to serve on the half-shell, opened up the crab meat and took the top off the quart of hot chowder. Everything was delicious!
