    Ichiban and I have a funny history. Let me explain: I was…read moreborn in Rapid City and spent half my childhood there. When I was maybe 5 or 6, I went to Ichiban for the first time with my dad and his friend. My dad used to come here a few times every week when we lived here- he even knew the owner and was well acquainted. But, I was a young American kid, trying sushi, which is a very hit or miss cuisine as it is. I hated it, and I remember trying an ice cream they had there (green tea I think), and it was a terrible experience. My 5 year old self never wanted to come back. Now, being a mature 20 year old (sometimes), I have developed quite a liking/ obsession with sushi. For Easter I was planning to see my family that still lives in Rapid City, so I wanted to go back to Ichiban to try and reverse my bad memories of dining there. This didn't turn out to be quite as glamorous of a turn around as I had hoped. Ichiban is a very casual Thai & sushi place, so you don't have to worry about looking nice or keeping it formal. The menu featured an insanely long list of special rolls, which made it very hard to choose. As much as it pains me to say, I was pretty disappointed in the food. "Da Bomb" roll was pretty decent- that was my favorite roll I tried. But all the other rolls, they were really average and just not high quality. I've had some pretty great sushi and Ichiban just did not hit that mark in any way. Even my dad, who used to come here all the time, agreed that it was a big let down and the quality of the food has plummeted since we lived in town. It's just really unfortunate. The service was decent, our waitress was an adorably smiley lady and she kept up with us well. And even though I now appreciate sushi for all it is, I still don't wish to come back to Ichiban if I have other options. Sigh.

    What can I say????…read more Super good! I went for Pho mainly. I was going to try a different restaurant the day before called Pho Vietnam, but they put a bad taste in my mouth before I could even try it. I'm glad I didn't, and I'm glad I tried this place instead. Menu has a good selection. Seems like also some Chinese American food. I got a Thai tea; which was amazing. I ordered a grilled beef banh mi that came with a side salad! Sooo big and huge.. Then I ordered steak pho with tendon... I ordered a small and it was more than enough. Good portions, flavorful and had some good depth. Good amount of veggies to add to pho.. I dipped my banh mi into the pho and that takes it to another level. On a beautiful summer Friday evening during tourist season, I was a little surprised it wasn't busier because the space creates a great first impression. We ordered the General Tso's Chicken, Mongolian Beef, spring rolls, and two boba teas. The sauces on both entrées had good flavor, but unfortunately the proteins were the weak point of the meal. The chicken was fair, but the beef was extremely tough and dry. The texture was so chewy that it almost felt like beef jerky that had been rehydrated in sauce. The rice also didn't seem fresh and fluffy as I would have expected. The spring rolls were easily the best part of the meal. They were fresh, flavorful, and the highlight of everything we ordered. The boba teas were a bit underwhelming. They were so sweet that the sweetness completely overpowered the tea flavor, making it difficult to appreciate the drink itself. Our total came to about $64, including a 15% tip on a pickup order. At that price point, I expected better quality and value, especially considering the portion size of the Mongolian Beef. I genuinely want local restaurants to succeed, and Pacific Rim has a nice atmosphere and some promising flavors. However, based on this experience, the quality did not match the price. I think more attention to ingredient freshness and execution would go a long way. I hope this feedback is taken constructively, because I'd like to see the food live up to the potential of the restaurant itself.
