They do the processing on site, including organic processing. You can also purchase large bundles of meat if you have a big freezer. We were both happy with our choices - all of which was made fresh. The "pickle fries" were very interesting. Shoestring style fried pickles, yum. The prices were reasonable and service was good. We were surprised by the quality & thrilled we didn't hit up subway!
