I often describe Tijuana cuisine as going through a culinary renaissance. So many restaurants keep…read moregetting better and fancier with each passing year, it's quite remarkable. Even Anthony Bourdain thought so... and come on, if Anthony Bourdain makes a statement about food, it must be truth. The funny thing is, as much as the culinary arts have grown in town there really aren't that many culinary schools in town that aren't crazy expensive private art schools. It's a bummer that people have to go across the border to get this sort of training and education. That's why I'm a fan of this Culinary Art School. The quality of chefs that come out of here is amazing, some of them work at the finest restaurants in town. Aside from the usual culinary school programs and degrees they also offer small workshops where anyone can sign up (last one I heard of was a beer appreciation course) if this is something that might interest you go ahead and sign up on their website so you can get the newsletter!

He had some of us help out in the kitchen, and that was really fun/cool to get some tips on prepping some of the items. The food was seriously fantastic. He put together a tomato sauce and guanciale pasta for us, with some side dishes (chicken and prosciutto, mushrooms, and mashed cauliflower) and finished it off with a Tiramisu from scratch! Place a special cake for me on top of that, which was probably one of the best chocolate cake/mousse desserts (sorry I don't know what it's called) I've ever had. I would 100% do this again and highly recommend to anyone looking for something different to do with a big group.

I called Bibi up and shared that I was looking to learn knife skills. She had me choose what I'd like to cook. I went with French theme - salad nicoise and apple tatin. You're greeted by her warm smile and enter her beautiful house - and you're completely transformed to a dream. She had all the knives laid out and explained the pertinence of 'mis en place'. She even recommended the must-have knives and where to get them without breaking the bank. She customizes the class on the fly depending on your skillset and wants. She went at the perfect pace, letting me give it a go while telling stories of the dishes and alternative options. She even made me an espresso with our apple tatin creation. I left feeling confident in making the two dishes on my own and extremely grateful to have met such a special soul.
