We were a bit confused that some of the signs for Pignole say Suastene, but we found out that they had recently been sold. Despite catching them in transition, the winery open its doors early for us. We started with a tour of the facilities where they explained their process and history. The prosecco vineyard has been in the family for decades, and you can truly tell how passionate they are to share with visitors. We then moved into the main house for the tasting, which felt cozy yet elegant. We were welcomed with homemade breads and treats made by the family. Each Prosecco we tasted was distinct and delicious, and we learned about the process and tradition. They made us feel so at home, and I would highly recommend to anyone to stop at Col de Lupo. Spitz will bark at you but don't be fooled-he wants pets! And Mya will knock you down to get ear rubs :) Julia, a member of the family, guided us through the family's production process and gave us a quick tour of where the grapes are pressed and then stored to ferment. After a quick tour of the production warehouse you'll get to taste the delicious and final products inside the main house. Of all the wineries I visited this was the only one that made and gave us to taste a non-sparkling prosecco, which according to our guide Julia is the typical table wine for families living in the prosecco wine region. I never even knew there could be a non-sparkling prosecco! In total, we were able to try four different wines produced by the family. As we went through each wine, Julia was extremely informative in describing the process in making that specific wine and the foods it paired best with. She even had a chart that was very helpful that outlined different varieties of wines starting with most dry to least. Until this trip I never understood truly what the difference was between a brut, extra dry, etc. until Julia outlined it for us. To top it all off, during the tasting Julia's mother brought out a tray of traditional Venetian style cookies to compliment the wine that were absolutely delicious. Overall, Julia and her family (pups included) were extremely hospitable and made us feel at home within their home as they shared with us their family's history and wine-making traditions. They have collaborated with some great Stateside breweries like Other Half and Cigar City. So, those are especially fun beers to try. We love their outdoor beer garden (there is some indoor seating as well) -- lots of seating, dog friendly, foosball table. The atmosphere reminds me a lot of Austin, TX breweries. Parking is easy and plentiful. Not always the case in Italy! They also have a small food counter that serves delicious "brico," bread topped with all sorts of local ingredients such as squash blossoms, 'nduja, sausage, salami, peppers, and more! Be sure to check out their offerings when you visit and order one or two. They are not to be missed!
