After 12 hours of driving this place hit the spot. Staff were super friendly, and though the food truck is a small setup at an old gas station they pack some big flavor. I've never heard of frito pie, but it was damn good. If I'm even through again I'd love to try the ribs. read more

We pulled over because I saw this little road side stand with an actual smoker out back. In my experience, if you can smoke meat in the middle of a Texarkana heat wave, you are 1. Tough as cow toenails and 2. Dedicated to smoked meats. We were not disappointed. Generous portions, meaty, smoky, tender with just enough fat and bbq. And a fat and happy owner serving things up with a smile. There's no seating but we turned the AC up and fought off the dogs to eat. Definitely worth it if you do the drive to Huachuca and pass thru here. read more

I've been passing this food truck for a minute now and they're always closed. I was starting to think they just stored the truck there. Needless to say the one time I saw it open I had to stop...especially with a name like Fat and Happy. I ended up getting a QP of brisket and a QP of the pulled pork. It comes with pickles/jalapeños/onions and bbq sauce. The brisket was some of the best I've ever had. The pulled pork was just as good. Seriously, their bbq is amazing. FYI they do chop the brisket and pulled pork. I really didn't care for the bbq sauce until I poured some on the meat and it just went so well together. I could kick myself for not getting some ribs. This is a food truck. I was glad I stopped. They have a picnic table under shade, where I was able to enjoy my bbq even though it was 95 degrees. The guy was plenty friendly, and I was glad I brought him my business. I prefer my brisket sliced, but all he offers is chopped. But it was close to the best chopped I've had in Texas! The ribs were only so-so. They were well-done and tender, but maybe just over done. Not happy with mac and cheese- cooked way too long, and all mushy. Food truck is parked in a parking lot next to a gas station - don't miss driving by it! There are not many options available off the highway besides fast food and we were looking for a 'real dinner.' The BBQ was amazing and some of the best we've had! We had a chopped brisket platter, brisket sandwiches and pork platter (between the 4 of us). Meat was tender with a great smoked bbq flavor and bbq sauce was amazing. Green beans with bacon and seasoned corn hit the spot. Platters are very large and could easily be split between two people. There's a picnic table nearby if you want to sit and eat although ours was packaged up nicely with everything we need to take it to go. Tried both the brisket and the pulled pork - both were good, but we liked the pork best. We were staying nearby at an AirBnB with family and were planning a little get-together for my son's birthday. I didn't feel like cooking so I was searching for something local that could feed a big group. I found Fat and Happy BBQ online and called to see how much notice they would need to cater a meal for 12. Thankfully they said the next day would be no problem, so I swung by the truck to look at the menu and place my order. I ended up getting 5 pounds of sliced brisket, 12 sausage links, a tray of green beans and a tray of mac and cheese. I picked it up the next day right on time and it was hot and delicious! The brisket was incredibly moist and tender, even the lean pieces, and the crust was perfectly salty and delicious. The sausage was also good and juicy. Sides were equally good - the green beans were amazing! Very flavorful and full of bacon. Mac and cheese was tasty as well with a nice brown cheesy crust on top. We were all pleasantly surprised at how good everything was, and the owner was SUPER friendly and helpful. If you are ever passing through Memphis, TX do not miss this amazing food truck!
