Upon entrance, we were seated quickly, and our waitress was incredibly attentive and polite throughout the entire meal. We ordered some drinks to start, and they were excellent--we really enjoyed them. For our appetizer, we got the single order of guacamole. Unfortunately, it wasn't great; it was mostly just lacking flavor and needed lemon. For our main courses, we went with tacos, which turned out to be a bit of a mixed bag: * Birria Quesatacos: By themselves, these were honestly not great. They absolutely needed to be combined with the provided dipping sauce to be palatable, and the meat itself lacked basic seasoning. * Steak Tacos: These were decent and definitely the better of the two orders, but like the birria, they still needed more seasoning to really bring out the flavor. Overall, the main courses weren't outstanding and we decided to forgo dessert entirely. It is a nice spot with fantastic service and great drinks, but the kitchen needs to step up the seasoning to match the high quality of the staff. I would rate this restaurant a 3.0

I ended up getting a couple of other drinks ended up being Mai Tai which tasted way better. Now on to the food...shrimp tacos were made with the small shrimps and was plentiful which was good. Just when I asked for cheese it was the queso fresco I believe which was not what I expected. I also ordered steak tacos and the steak was cut in strips like you would find at a Chinese restaurant. Not seasoned at all. The guacamole I ordered with a side of chips didn't have flavor or salt either. I was so disappointed again this restaurant seems to supposedly should have been "authentic" and everything should have tasted homemade and on point. Would I come back no... I don't know what happened there, but they were a complete miss for me. The funny part is that Diablo's wasn't even our first choice. We had just come from a 90s party and were a little underdressed for where we originally wanted to go. That spot had a stricter dress code, so we settled for Diablo's instead. Would I return? Probably not. Even if I'm already at MGM, there are several other spots I'd choose first for better food, better energy, and a better overall experience.
