Tierra Caliente is almost glitzy for a humble Mexican food truck, but what really shined amidst the colorful truck and lights were the food! I had the Burrito supreme (adds avocado and sour cream) stuffed with rice, beans, onions, and my protein of choice, Al Pastor. It was just so amazing that I almost didn't need to add any salsa. The Al Pastor was tender and juicy, and perfectly seasoned. There's no need for pineapple in this one! It was so filling AND fulfilling! The Carne Asada Quesadilla we shared was also incredible. It actually reminded me a little bit of the best smash burger in terms of its balance of crispiness and savoriness. This was not some thin, dry Quesadilla, that's for sure!
