Yesterday I got the carnitas tacos... oh my goodness they were hands down the BEST carnitas tacos I've EVER had. The corn tortillas are handmade and the carnitas were fresh and tender with a little crisp, AMAZING. I don't think the people of Hollister know, but they serve breakfast too. I wanna be selfish, cause I know there will be a wait once people find out, but I also want them to keep serving it cause it's so good. My husband usually gets the Huevos Rancheros, I get Chilaquiles Verdes w/ Cafe de Olla, and my kids get the pancakes that are not only beautiful, but so yummy. The chilaquiles are delicious, the tortilla chips have a good crisp in every bite. Their pancake batter is unique and definitely made in house, I wish I could get the recipe to make at home.

The portion is huge and the flavors of all the ingredients are truly amazing. I don't want to sound corny, but each bite was like a friggin' fiesta in my mouth. The steak was seasoned so well, I was giving up hope for Mexican taquerias that don't marinate or season their meat enough. I'm not sure what is going on, but some places are really turning down on the flavor. Staff here were super nice and the place was clean. We had 15 people total and needed food for that amount. I requested the food weeks in advance, took about a week to hear back. When I did, Gustavo told me what I should order for that amount of people. I took his advice and ordered the fajitas both chicken and steak, rice, beans, salsa, guacamole and chips. We finalized the details over email, he sent an invoice with the pick up time and price. Well, the day arrives my husband goes over at the agreed pick up time and it was like I never put a catering order in! He shows them the invoice and they did finally get our order made but it took over 30 mins. They were apologetic at least. When he got back and we opened the food the tray of fajitas had mostly bell peppers, definitely not enough meat for 15 people! Also don't expect the fajitas to come with tortillas apparently you have to order those separately which I didn't realize. We ended up running to the grocery store to buy tortillas. I hate to give 1 star because the food was really good but my catering experience was very disappointing.

But a little later he recognized it's a red sauce and I suspected we got someone else's order! And the server confirmed we did. She felt bad but we didn't have an issue because we were hungry. The restaurant was spacious and comfortable. The food was delicious, I had a pork dish with chili verde which was excellent. My son had a chicken burrito which he enjoyed and gave a big thumbs up. The staff were very nice. 'Cash Only', sign at the front door is still in place which was not a problem for us. My only suggestion for the owners is to consider having some soft background music playing.
