My family and I live in Texas. We eat Mexican food probably 3 nights a week. We were in Independence for the weekend and tried out El Pueblito. Usually, this place is pretty spot on but today's experience was less than stellar. The food was good and very fresh but, the service was not acceptable. First he took my drink order and brought it promptly, but it was a full 15 minutes before he came and took my order. It was odd because it was after 1:30 in the afternoon and the lunch crowd had thinned out somewhat. I watched him wander around aimlessly until he finally remembered to take my order. The food came out and was great but he never came back again and I could have used more napkins, chips and salsa. When I was finished another server came and took away my used plate and utensils. So I sat another 10 minutes or so until he again, finally remembered to bring me my check so I could leave. Waiting, to be waited on is not my best attribute, I almost got up and walked out before he finally took my order! read more

The food isn't served overly spicey but there are several levels of hot sauce for those who like their food with more flavor. Chicken chimichanga and burrito jalisco are our go-to favorites. Ambiance: Nice family sit-down restaurant with fun hispanic architecture indoors with arches and a pastel white color scheme. There's even a mural indoors. Service was good although our waiter did ask us our orders twice after writing it down, that was the only hiccup. Food: I got the lunch #12 which is marinaded chicken, rice and avocado salad all of which were pretty disappointing. The dish came with 3 thin strips of chicken which were crisped on a stovetop and covered with a tomato chili sauce. The problem was that the pieces were soo thin the chicken dried out and had the texture of leather, I had to saw through it with my knife. The avocado salad was chopped lettuce, a cross-sectional slice of white onion, 2 slivers of avocado and a tiny lime. Along with the flavorless rice, I found nothing enjoyable about the meal. As a lover of Mexican food I can't recommend this place at all given the poor cooking technique, poor dish composition and bland flavors. read more

Upon a recommendation of a local we decided to have lunch at El Pueblito. Wow. So glad they recommended this place. From the time you step in you are greeted and treated like they are glad you are there. The facility was super clean and well decorated. Our waiter was fantastic! He was very responsive to our wishes and requests without being overbearing and pushy. We all tried different entrees and sampled each others. The food came out fast and hot! We didn't feel rushed to leave as we sat and visited. More than 3 times as we were leaving an employee gave us a "thank you". It felt like they sincerely meant it. Independence Kansas is a miserable excuse for a town were under 8000 people live out their lives in total obscurity. Dead people have more of a pulse and the pace of life is much akin to the viewing of flies fornicating. El Publito's by all accounts could be called "A dive mexican joint on the edge of a town that time forgot". It is truly one of life's mysteries how the worlds best Queso AND Chili Rellanos ended up here. .....on reflection I guess it's only fitting that a town like Independence has such a culinary claim to fame, lest the town be so completely lame is is pulled into the ebon void of non-being. read more

We saw El Pueblito on our drive in and discussed how good mexican food would be while eating freeze dried food at our camp site last night. It's one of those Mexican restaurants that pours lots of cheese on everything and the guacamole comes out of a big bucket in the back (don't know what's really in it). The beans and rice were bland. I ordered a Chile relleno, not sure where the poblano was at. There were like two bites of the pepper and the rest was ground beef and way too much melted cheese. If you like real Mexican food don't eat here. I had quite a bit of my meal left and my husband asked if I wanted a takeout box and I told him no way, not worth the effort. I asked my husband how his fajitas were and his comment was"not terrible". After not eating there in 5 years due to I live in Oregon now. I took my husband there while visiting family back in September. The place has changed sooo much! They have remodeled but not for the best. It still have a very very small entrance and now a very small sitting area...not sure what why they remodeled?? I ordered a chilli relleno, asked for it to just be filled with cheese. What I got looked like baby poo covered in cheese, and 2 small strips of chilli. I asked where my chilli relleno was, and they told me they do theirs different and the blended up ground beef covered in cheese was the relleno. If I wanted the whole pepper, I must order their pablano pepper filled with chicken. REALLY!!! It was the most unappetizing thing I have ever seen. Avoid this place!! read more

Restaurant was clean and the atmosphere was nice. The wait staff was pleasant and attentive. My water glass remained full and we never ran out of chips; however the positives stop here. I am from San Antonio, I have had the best Mexican around, so my expectations were already low. They seemed to manage to lower them even more. A co-worker (from Louisville) suggested that we go there for lunch. I got the fajita nachos (steak/chicken). Who covers fajita meat with taco seasoning and queso? No pico, shredded lettuce, guacamole, jalapeño, nothing. I was so disappointed that I skipped supper; stomach ache from all the taco seasoning. The food was prompt and I must say my co-worker's chimichanga looked good. What doesn't look good fried though? The bill was $8 and some change. I am not a finicky eater (that's my wife) but I couldn't wait for the meal to be over; my co-worker talks too much but mainly it was the food. read more
