Sisig fries
Annika G.

El Jabalito is THE BOMB! Chef Jake knows exactly what he's doing and is doing the Central Valley a great service by being one of the few Filipino food spots we have. You can also really tell he cares about the quality of the food he puts out and wants to make sure that his customers are given the best. I went with my mom to try it out near Reclaimed Mt. Goods in Madera. My mom is from the Philippines and often misses home food. I got the sisig fries, and my mom got the IDK plate. They let us sub out the pork lumpia for an extra vegetable lumpia, which was nice. My mom loved the food and said it tasted like hers. I agreed with hers after taking a bite. My sisig fries were loaded and very filling--I only ended up eating half the box. I love the attention to detail--the fried egg, the mayo, the furikake, and the calamansi--everything was perfect together. The food truck itself is covered in stickers and also has fruit juices and Filipino snacks that we enjoyed seeing. I love the decorations/designs on the truck as well. After we finished that, we got some halo-halo, and it was also great. My mom especially liked the homemade ube leche flan. Everything was fantastic, and I will definitely be returning.

Sisig fries and ube horchata

Love their sisig fries. Bed of fries, plenty of diced pork, their secret sauce, and the fried egg on top brings it all together. Their ube horchata is refreshing and delishhh!

Absolutely amazing food! I loved everything about this food truck. The owner is always so friendly, welcoming, and smiling, which makes the experience even better. The food is consistently fantastic and never disappoints. Highly recommend!

Vegan Spam Silog

With this being a food truck it is hard to get a hold of them. I recommend following them on Instagram because they post their schedule, location, and updated menus on there. I caught them on a random day at Gazebo Gardens and became an instant fan. With the closing of Boba Silog (ifykyk), the Filipino food scene in Fresno is becoming more and more scarce. El Jabalito is currently crushing it with their curation of food that excludes the typical selection: lumpia, pancit, adobo, etc. Service is friendly and the wait is decent. The first day I had them was actually a vegan event. Vegan food isn't something I typically go for, but something about their vegan spam silog was calling my name. I do not regret making the drive at all, because it SMACKED. No one can top Boba Silog's garlic fried rice, but this comes pretty close. It's not as flavorful or crispy, but does its job well. The vegan spam packed flavorful and gave me the peace of mind that I'm not eating the packaged sodium that is regular spam. The egg. THE EGGGG. I mean, look at the picture. It was perfectly cooked, seasoned and dressed to perfection, and pulled everything together. It also came with banana ketchup. A staple. No complaints here, what a unique contribution to the Filipino scene here in town. With a rotating menu and their creative minds, best believe I will be back.

Eggplant pancake, a seasonal special

This is a new food truck in Fresno serving Filipino food, and I'm so happy to see that they seem to add new stops around town every week. (Note: they are not at the address on their truck; that's their home base or whatever.) I've seen them at Gazebo Gardens, Vineyard Farmers Market, Spokeasy, 559 Night Market, and Tioga Sequoia beer garden - and like I said, they seem to add spots every week, so make sure to follow them on social media to know where they'll be. I grew up eating Filipino food and there isn't enough in Fresno so I'm just loving them. I've committed to working my way through their menu which might be hard because they seem to frequently do specialty and seasonal items. For example, right now they have a pumpkin curry which I loved: veggies in a pumpkin curry over rice. So far I've tried the lumpia (delicious. we have get two orders every time because my husband has to have an order to himself), sisig fries (marinated fried pork and egg with yummy sauce over French fries, so good), eggplant omelette (my fave, so delish!), fried rice (comes with a fried egg on top, so good), and the ube French toast (made with ube batter and some kind of sweetened condensed milk topping with fresh berries on top - decadent!). I am dying to try the adobo but they sell out! Wishing Chef Jake much success! Thank you for bringing your delicious food truck to the community!!

I had the pulled pork sandwich with a side of yummy coleslaw. The sandwich came with several single serving size containers of bbq sauce. The pulled pork was very tender, moist and smoked deliciously. Soft hoagie roll. The bbq sauce was very flavorful and not spicy which is how I like it. I loved the coleslaw because it wasn't too mayonnaisey, more of a subtle vinegar flavor. My son ordered the brisket with collard greens which he says, you can't truly be a bbq restaurant without collard greens. He loved them and the brisket was tender and lean. His husband ordered a tri tip sandwich with the Mac n cheese along with a made to order Blackberry Lemonade. They both loved their meals. We all agreed we'd return for another meal. Tge desserts looks delicious! Bread pudding, peach cobbler and a couple other choices. Like I said, another day to indulge in dessert. It is outdoor seating only on picnic tables. You could see the owner and his assistant working hard to prepare the meals. They had a steady stream of guests. Good location with parking very close by.

I love brisket, the last 3 times, brisket was dried and probably days old. Brisket in suppose to be tender and juicy. This was not. Tri tip cut the wrong way, not even tender, consistently out of certain side dishes and act like they're sold out. Service is ok, food truck style, they had the indoors open for a little bit, not sure what's happened. The ambiance is downtown food truck style, service is ok, near other bars and restaurants. 11/14 - 2 plates ~$50 12/4 2 plates - ~$75 They lost a customer in me. I can go to mega Texas, westwoods or any other location for better bbq options.

The location is right next to a gas station so little parking available. They have a food truck outside next to their dine-in inside. I like that they have a limited menu so that's was good. I will say this, I've never had Hmong food so I am not sure how it should taste. I order half dozen egg rolls and three spring rolls, and a large Nab Vam drink. The egg rolls were crispy, although the glass noodles inside caught me off guard. Actually, I didn't like them... I do like their sweet and spicy sauce though. The spring rolls were nice and thick, and I like that they add pork to theirs. Definitely filling. However, their peanut sauce is overwhelming spicy. It kinda masks the nutty flavor of the peanut butter. The drink was ok. I love how colorful it was. I listen to the guy and shake my drink well, but I didn't find it no where sweet. I think I had expectations that it would taste like a boba drink but yea it felt off for me. Other wise, it's ok. I ended up disagreeing with my friend on the eggrolls claim lol

My wife is fiending for something beefy, and sees a steak dish on the menu. I say, "I dunno about steak from a Thai (maybe Lao) food truck." It was called Crying Tiger with Rice, for $17. But hunger won over, and we ordered it. The food came out in good order and promptly. And oh my, this steak was DELICIOUS. Cooked a perfect medium rare, it was tender, juicy, marinated with something that brought out the steak flavor. With the dipping sauce, it was a savory, citrus-y delight with a small spicy kick. Sorry for eating part of it before thinking "I definitely have to rate this place". Lol. I highly recommend giving this place a try. Happy eating!

One time out at the college, they ran out of, if you can believe it... sticky rice! They did notify us before we ordered, but again, that steak and dipping sauce was just something I couldn't resist. They quickly offered to replace it with eggrolls and we got 4! (There was another time that they did not come out to a scheduled spot due to weather. And I wondered about food trucks not coming out due to rain, is it a functionality thing for the truck or do they think people won't be out and about to purchase? Because let me tell you staff love a chance to order food that isn't the cafe without having to leave campus! Haha)
