This is my go-to spot when I roadtrip down to SoCal!…read more I didn't realize that I haven't wrote a review for Cotija Taco Shop yet. I've been stopping here every time I go to SoCal these past couple years now. I always stop in Los Baños for Dutch Bros, Cotija, and bathroom break at either Marshall's or Target. Lol This spot has some delicious tacos, nachos, carne asada fries, and more. My most recent visits was with my boyfriend a few weeks ago. We stopped by here on the way to SoCal and back! They do have a few tables outside where you can enjoy your food. There were times when I just took it to my car to eat so I can listen to my podcast. Lol The staff there are friendly, and they have a couple of parking spots too. I've also parked on the street as well in other times that I visited. If you're looking for a solid Mexican spot, you must try this place! :)

The people at the counter move quickly. Be prepared to listen for your number and quickly order in Spanish. There's an outdoor area to sit down and eat food in the shade and a bathroom onsite for customers. The place has a full market too if you need to grab any groceries while there. The food was good but not great, though very fresh. We tried both the chicken and pork tacos.

There were about 2 tables with about 5 people. One with three people and we had 3 and we waited about 40 min. They did let us know there would be a wait and they provided us free chips n salsa. We did not like the waiting but the the food was good worth the wait and enough for us to go back.

Upon entering, we enter a cantina-style interior with shallow lighting which seems to mimic sun light coming down. There are several ceiling fans and TV sets; one was showing Mexican rodeo, which some may not like to see, so I recommend some discretion. Music was calm, romantic and easy-listening and the chairs were comfortable. Good ambiance The restaurant is a combination of ordering at the counter but served at the table by the kitchen workers; friendly service overall . Prices are high but worthy especially of you are ordering for yourself. I ordered crunchy tacos with carnitas which were not on the menu and is an offer mentioned by the crew. They were crunchy and had a flavorful yet mild taste of the shredded pork. The toppings by default come on top of the tacos, rather than inside. The tacos lettuce and queso fresco which I have no problem with, and the toppings are optional. One person in my group had the Breakfast Burrito with Chorizo and Egg and said the burrito was really good with tender chorizo that had a mild kick and the burrito was a well-wrapped meal and also split in two. Another person in the group had Quesabirrias and told me to say that they were DELICIOSO. Crunchy shell with, juicy tender meat. Bathrooms are clean a d easily accessible for handicapped people and all is good. I recommend locals to come to Carnitas del Bajío here in Los Banos, and anyone driving through or visiting for the day , I say drop on by.

This taco truck, a definite must stop cuz their food is AMAZINGLY soooo good First and foremost, the workers Ivan and the lady are so very kind and helpful with taking me and my husband's order. The kindest people We ordered: quesabirria-came with 3 quesabirria tacos, onions, birria meat, cheese and lots of juice in the tacos....omg...no dipping juice needed. As it drips off the taco, and onto the plate u can dip it in the taco. But the flavors of the quesabirria was on point and the amount of meat was just right. Hubby ordered super quesadilla with pastor meat. He said the flavor was definatly on point as well, had everything in it and the way they make their grilled onions, made the whole quesidilla wow! And btw they add those grilled onions and jalapeños in all the tacos, quesidillas etc..unless u don't want them, then let them know. To me it's sooooo good n yummm!! Overall the service was a plus. Very good food, u will not be disappointed, it's a definite worth a try if u are passing by or just in town. Located next to ACE hardware. I give them 100 stars !!! And more !!
