Cambalache is an Argentine steakhouse, which is reflected in the style of grilling their meats (over an open flame, which can be viewed at the back of the restaurant), and the service of the meat itself (a La plancha, at the table). We chose the ribeye (600-700g) to share. It was perfectly cooked to medium temperature, and sliced for us tableside. A beautiful cut of meat, and very flavorful. Speaking of tableside prep, I highly recommend saving room for the strawberries Romanoff - our server spent about 20 minutes whipping a combination of vanilla Haagen Dazs, Grand Marnier, cream, and fresh-sliced strawberries into a fluffy concoction that was divinely yummy.
