    I've been here 4-5 times now. Sometimes it's just to run in to grab a chunk of cheese and ask Tracy…read moreabout the weather for the ride back to Massachusetts. More often we spend a few hours tasting and dining at the bistro. As for the actual tasting, Tracy knows what's up. She is very easy going and incredibly knowledgeable about the products from the black snake whiskey, and eden iced ciders to the jasper Hill Farm cheese. You pay a minimal price and pick a number of alcoholic beverages to sample off the list. Tracy will arrange your choices in the order in which they should be tasted and give you the history of each as you taste. They have wine, vodka, gin, and ice cider. Ice cider is NOT a beer-like cider such as angry Orchard. It is a fancy type of distilled cider made by an elaborate process of freezing and skimming off ice which leaves a concentrated, amazing cider. It's made somewhere else in Vermont, but we learned they recently started making it in the basement of the tasting center itself. All products are Vermont made. Next we move over to the bistro and visit "pixi" the bartender. We order the shrimp and corn fritters with maple butter and the chicken liver pate with apple chutney which Mike was allowed to take home (jar, spoon, and all). I've always loved the fritters which are to die for. "Pixi" brought us extra salted triangle shaped crackers for the pate and gave us numerous samples of various drinks including Hill farmstead's new beer, "Mary" and the "Magog sunset". Whiskey shots are $6. All products from the testing center as well as maple candies, bakery items, and cheeses are available for sale at the back of the store. They even provide maps and information on all their partners. Overall, this is one of my favorite places ever. Not just in the Northeast Kingdom, not just in Vermont, but ever.

After looking at the very attractive displays showcasing each product made at the Distillery, my daughter and I opted to share a tasting. We chose the Moroccan Rose and Grapefruit Flavored Vodka to start and I loved the distinct fruity taste without the sugary sweetness. Next was the Maple Gin, which was lovely as well. Our server told us she likes to mix it with muddled blueberries and ginger beer for a refreshing summertime mule, and I agree that does sound delicious. Our third taste was the Bourbon Maple Cream Liquor, which was so delicious, and we finished the tasting with the Maple Cram Liquor, which was smooth, sweet, and went down very easily. We were impressed with the cleanliness of the store - everything was sparkly clean and shining. The layout of the displays was so attractive. The tasting room is small with a single counter for tasting and a wall of bottles for purchase but it's well worth the wait if needed. You can even sample the syrups while you wait for free! Our hostess was very informative about all of the spirits and very appreciative of each of her customers. She talked a bit fast but that's understandable in the environment, it's busy!! We each did a tasting, the special tasting and the regular, so we got to try almost everything! Our cabinet and fridge got a few new additions with the canned vodka sodas and a single barrel. I highly recommend a stop and a tasting of the Hopped Gin, whether you're a gin drinker or not!! We visited in August 2024.

We had flights and tasted all of their ciders. Ironically our mutual favorite was a hopped cider. It was literally the only one we liked. At least for now, it seems they should stick to wine. The man working there was incredibly knowledgeable and friendly. It was a great experience learning about the ciders and speaking with him, just wish they tasted better. All of our guest commented on how beautiful the winery itself was, and from the moment they arrived the atmosphere was warm, relaxed, and elegant--exactly what we hoped for as we kicked off our wedding weekend. The team at Seven Birches was outstanding. They were welcoming, attentive, and genuinely invested in making sure everything ran smoothly. We opted for a wine and cider tasting, and the staff was very friendly and made sure the entire process was easy and seamless, allowing us to truly enjoy the night with our loved ones. The wine and cider were both amazing, and after the tasting most guests stayed to have another glass. In addition to our welcome party, Mark and the team at Seven Birches also helped us create our own red blend and white blend for the wedding, complete with personalized labels and everything. Not only did this help us create our own special touch for the wedding, but also it was a great opportunity for my husband and I to learn more about the wine making process and all the intricacies of what goes into it.
