First review. That is kind of fun. We drive a regular Highway 65 route between Minneapolis and…read moreour lake home near Deer River. Today (5/27/2021) we saw signs for the new T-Bones. As a home BBQ-er and a certified KCBS BBQ Competition judge I had to stop. The owner said they'd been open for five days. I bought brisket and a couple of rib bones, my favorite two meats. It's not dinner time yet, but I have sneaked samples of both. Good BBQ IMO does not require sauce and this is good BBQ. (They do offer several sauces but I did not indulge.) The brisket was great. Dark, smoky bark and a good flavor. My sample was sliced from the area where the point overlays the flat with a layer of fat in between. I like to have a little fat (= flavor) so this was perfect for me. Others who prefer less fat might want to remove it or ask for slices from the flat only. This was much better than comp brisket because the norm at comps is to trim every microgram of fat. The result is I don't really like comp brisket all that much -- too dry. The ribs were very good, too. By my standards and comp standards, they were slightly overcooked. At that point there is a very fine between slightly overcooked and mush, but T-Bones stayed safely away from mush. Also, many casual eaters of BBQ ribs want and expect falling-off-the-bone meat, so it is no surprise that T-Bones is going slightly in that direction and I do not fault them for that. To repeat: The ribs were very good. (For reference, here is the KCBS standard: "When sampling a properly cooked contest rib the area of the meat where the bite is taken should be pulled cleanly from the bone with very little effort. The exposed bone of a well-cooked rib will often dry immediately. Ribs should be moist, flavorful, and possess good texture. ... When a rib is overcooked, most or all the meat comes off the bone when sampled. Additionally, the meat of an overcooked rib has a tendency to be mushy and have a poor texture.") So, people: Go there. Spend money. Make a special trip if necessary. I want to have this guy selling BBQ along our route for years into the future.

Instead I got a green olive swiss mushroom burger with fries. They get an extra star for the creativity of adding green olives, but they will not serve pink and they used a regular grocery store white hamburger bun. The burger was well done and on the medium size. They could make the burger pop if they used brioche or other nicer bun, used more meat, and went pink. A disappointing 3 stars for mucking up what could be a home run. Maybe a 4 would be more fair given the creativity of the green olives. I almost did not order the fries. OMG. BEST EVER FRIES ON THE PLANET. It turned out the bartender and server, Sharon, is the owner. She said she changed the recipe a year ago. Well, she did right. I frankly would go back just for the fries: big, perfect crunch, great color and flavor, and a huge portion. See photo. I thought about taking an order of the fries home to see if I could figure out how to make these at home. I will have to go back. Enthusiastic 5 stars for the fries. Another surprise was having two IPAs on tap. I got two of the Alaskan Brewing Company IPAs, and even posted a photo of it on Instagram of it. First off, we were out in the middle of no-where, and they have TWO IPAs on tap. Every other bar we went to did not have any on tap, and few even had bottles. I asked Sharon how in the world an Alaskan IPA wound up tjere. She said she asked her distributor for a really good IPA. She got it. A few 5 stars here: for being creative with two IPAs in the middle of no-where, for taste, bar service. Service. Sharon is very attentive and nice. I appreciated her candor about why I could not order a pink burger (the cook), the beer story, and her comical interaction with the two knuckleheads I was with who blew all their Pulltab winnings, plus about $60. 5 stars. Loved the decor, including a big red half of a canoe for Leinenkugels beer, and a smaller inflatable one. I guess it would be typical for an area bar. So this is not a 5 star fancy schmancy formal dining establishment. It is, however, a diamond in the rough for that area. 5 stars for what I wrote about, and hopefully the burgers will improve. This is the kind of place Yelp was built for: to direct people like me to high quality mom and pop businesses. I hope the locals appreciate what they have.
