I wish the consome was a bit stronger in flavor, but the birria tacos were a perfect combo of crispy and juicy. Buuuut the lengua tacos were the real star of the show. The lengua was tender, soft, melted in your mouth, and had an amazing flavor profile. Topped with some of their lime and salsa, and it was even better. The dud of the bunch was the carne asada fries. Coming from San Diego, I've had way better carne asada fries, and these were a flop comparatively. It's a large portion size, if you care, but I'd rather spend money on more tacos.

Our server Amanda seemed irritated that she had to serve us at all and denied a request (without even bothering to ask the kitchen) for a simple quesadilla for a toddler. I was pretty close to asking for an extra chorizo taco minus everything but the cheese. When a busy toddler mom has hands full and maybe can't memorize the menu instantly, perhaps the answer to "what are the salsa options?" should be more friendly than "it's the upper left corner on the menu". It's not that complicated, there are basically 3 options it probably would have taken her the same amount of time to say what they were vs making busy mom have to revisit the menu. Might do takeout next time, but for sure wouldn't dine in!

The portions are HUGE! I had the cheese enchiladas, and they were absolutely delicious. My husband ordered the birria plate, and it came with so much tender, flavorful meat that we took enough home to make a couple more tacos later. Having lived in Texas for many years and visited Mexico for about eight weeks each year, we're pretty particular when it comes to authentic Mexican food--and this place impressed us. The salsa bar alone is worth mentioning. There were so many great flavors, and everything tasted fresh. Part of me wants to keep this place a secret so it doesn't get too busy , but they truly deserve all the attention and support they can get. Since it was almost 9 p.m., I kept it light and ordered just one quesabirria taco, which seemed to surprise the cashier! My order was prepared quickly, and everything tasted fresh. The taco came with onions and cilantro on the side so that I could customize it to my liking, along with a flavorful consommé for dipping. They also had several aguas frescas to choose from, including horchata, mango, and jamaica. Jamaica is my favorite, so I asked if I could sample it before ordering, and the cashier was more than happy to let me. It was absolutely delicious, and I ended up getting one to go with my meal. Between the flavorful quesabirria, rich consommé, refreshing jamaica, and friendly customer service, it was the perfect way to end the evening. I'll definitely be back to try more from the menu!

Come to find out they charged me 1.00 for cheese AND .50 for the consume that normally comes with birria tacos. I wasn't asked if I wanted it or not. If they are going to ask if you want certain ingredients on your food they need to let you know it's an up charge or at least put it on the menu board everything that comes on or with it. This location was…read moreconvenient to give them a try on a recent trip to COS, and I liked it so much that we actually went to another location again before leaving. The breakfast burritos definitely lived up to the hype here! The breakfast burrito has bacon, egg, cheese and potato for that classic flavor profile. You can also get red or green salsa, and the green was best, but the burrito shockingly did not need it - the potatoes were buttery, the eggs were plentiful, the bacon was crisp and the cheese was gooey. I only intended to eat half of this massive monster but ended up eating both parts after a brief break for my stomach to adjust. No shame, it was THAT good. Maybe stick to that order though. I added on a half pint of the chile verde since our time in CO was limited and was underwhelmed - it didn't have much flavor and the texture was oddly slimy? Not a fan. Thought it would be good for dunking the burrito, and that also was a no-go. So stick to the breakfast burrito and you'll have a good experience.

I mention this specifically because I've been to a few other "T S" locations in the Springs, but the one that consistently out does them all, is the one mentioned off South Circle Drive and Airport. That said, .... I can't rave enough about the food, not to mention the cleanliness of the restaurant itself. I almost always order my "Go-to", a soft shell carnitas taco, which is served with two corn tortillas because the delicious filling is so ample that one tortilla won't contain it all when eating. Their meats are generously seasoned and the carnitas taco is generously smothered with pico de gallo, though recently they've omitted the tomato, which is fine with me because it has less moisture, thus allowing the robust flavors of the cilantro and onion to meld into the meat.
