Dos Gringos is excellent. I don't live in Carbondale anymore, so unfortunately I don't get to this restaurant/coffee shop as often as I'd like. But it's our first stop when we visit Carbondale. For the many, many years this spot has been open, the coffee drinks have been outstanding. The baristas are obviously well-trained. I love the Italiano breakfast burrito--the flavors are outstanding. There's not a better spot in town to enjoy your coffee and food, sit outside, and gaze at Mt. Sopris. The patio is really nice. Many of the employees have been here for years; kudos to the owners for treating them well. The owners and employees work hard, are friendly, and treat their customers fairly. It's clear from the crowds that Dos Gringos is a gathering spot for the community. This restaurant also generously supports Carbondale. A must stop. read more

The burritos are the most delicious thing I've ever tasted. But the employee Chris ruined the experience. Although he is friendly, he rolls the burritos into bricks which makes them rip easy (when eating or when he is rolling them), it makes the eating experience less enjoyable because when you bite into it you only get one ingredient at a time. Also he frequently puts the guacamole and sour cream on different sides which makes eating the burrito not as blissful because you can't get both in the same bit (even if you could get every other ingredient). The enjoyable burrito eating experience is to get at least 3 ingredients if not all ingredients in each bite, but he makes that not possible and messy. But the food is delicious. read more

I was met by a friendly proprietor very proud of his establishment. That was nice to see. The food is... well, hard to say. When walking in the front door one is met with a sign that lists a number of thought patterns that aren't welcomed: Discrimination, ableism, misogyny, and on and on. That all seems like good stuff, though it was a leap beyond where my head was - I just wanted enchiladas. But after prying my mind away from its focus on the simple act of eating and contemplating the appropriate social mindset one must adopt before grabbing that bottle of Tapatio (you know, the one with the Mariachi guy on the label), I was very comforted that the establishment placed so much emphasis on assuring equal rights that they took the very appropriate step of signaling that their menu is available only to those that enter into that social contract of proper social perspective before dining. Nothing whets the appetite like a stern, moralistic speech on an empty stomach, so I was ready to eat! So, my life partner (I call her LP so as not to violate the tenets of the mandatory social contract for this establishment - I know what you're thinking but it's OK - her pronouns are she and her) and I strolled in. Since we were taking a weekend trip in the area dining choices are fluid - the rule is to live off the land. Even so, I'm a bit of a traditionalist when it comes to food and I do a lot of cooking myself. I like green chili, red enchilada sauce, good carne asada, and a number of other things originating from Mexico, Central America. I love Cuban fare - ropa vieja yellow rice and black beans with stewed chicken, as well as Jamaican jerk and all of the Caribbean inspired fare. American country fare is also great - chicken fried steak, cream gravy, mashed potatoes. The world offers so many wonder culinary traditions that taste so great. The last thing I would ever do is through all that stuff in a big pot and mix it together into one brown unappetizing dish. I had looked at the menu for Dos Gringos on Yelp and I wanted to go somewhere else, but LP was adamant on eating here. So I put my foot down and said, "OK." In we went. The menu is an attempt at fusing Latin-ish fare with down-home fly-over state cultural leanings. Burritos with beans, asada, and mashed potatoes in them. There are some Cuban things mixed in with Mexican. That kind of stuff. Of course everything comes with a side of brown rice. This is a dietary trend I question, as much research has demonstrated that the rice grain husk exhibits an allelopathic defense mechanism and which may irritate the human gut - it does mine. No matter, though. There are plenty of gluten-free options for other parts of the diet to combat this completely preventable irritation. I mean, the carbon footprint associated with bringing these gluten-feee options to market is tremendous and it isn't even needed for most people and has nothing to do with the broad health implications of brown-rice-induced gut irritation and the other junk some many people eat while insisting on gluten-free choices. But hey, whatever it takes to feel good about it. So I'm all for it. In fact, just like Larry Grove, I got a John Keats autographed Grecian urn Filled up with my brown rice. Yes, I do! So you're following me here by now I think. There is fusion that works, and fusion that doesn't. And then there is just mixing a lot of stuff together like a college freshman in their dorm room after a dope fest at 2:00 in the morning. And in an odd turn of events, I find myself a little put off at the appropriation of some of these foods. These food cultures are all wonderful in their own right, but it just didn't work here. Maybe it's just me. Maybe it was the moralistic admonishment that meets everyone at the door vis a vis the sign I mentioned earlier. Maybe it's the name of the place (naming establishments after an ethnic identify seems problematic in this day and age - I thought we'd all learned that by now). All of that went through my head when really I just wanted something to eat. But since Dos Gringos started the conversation, I felt I needed to share. All of that I really don't care that much about. The main take away, though, is this: the food wasn't that good. read more

I served the barbacoa and the chicken lasagna to guests over the weekend and boy was it a hit! I also ordered guacamole and a beautiful salad - both were wonderful. It is very unfortunate for me to say but the Dos Gringos Burritos restaurant is not a business I will be supporting in the future. The food is very good that is undisputed. However the sheer amount of hostility and impatience the staff appears to have is just unbelievable. I seriously try to be as kind as possible and they still remain ill-tempered. Every time I have gone there I end up having a bad experience with the staff. It's honestly stress inducing and not worth the price or the food quality. I doubt the majority of people going there enjoy their experience with the staff. In short: bad service. read more

You can build your own breakfast burrito and they have all the options from guacamole it to pico de gallo to black beans or pinto beans, it's awesome. I love Dos so much. I have tried every single drink on their menu, I am NOT joking. I literally even had an interview for my dream college over Dos smoothies. It was supposed to be a 30-minute interview but it lasted for TWO HOURS. The vibes Dos creates are IMMACULATE. Here's my drinks review: -Their coffee is average. If you're into coffee you'll like theirs. -Their frozen drinks are all very tastey, way better than starbucks imo -Their smoothies are perFECt, they are EVErYthiNG. No matter which one you get, or if you build your own, the smoothie always comes out DELICIOUS. Worth the price. They make it with yogurt and honey and frozen fruits and banana. -Their seasonal drinks are to DIE for. When they did eggnog lattes I just about died. And their lavender lattes are also SO good. The seasonal drinks SLAP -The london fog they make is PERFECt. -The "Ole mexicana" is a tastey drink with a lil kick. They used to make it with coffee so idk if they changed their menu since I moved or what? -I love the raspberry mocha and the peppermint mocha but I always make sure to ask for a couple extra pumps of the raspberry/peppermint, otherwise it ends up being very mild. -All the other drinks are not worth mentioning. But none of them are bad. Their food. It's average Mexican food. Nothing to rave about, but certainly nothing to complain about. Finally, the vibes. I love Dos. I've been more times than I can count. I still have two fully punched punch cards in my wallet that will get me a free drink. I can't wait to visit Cdale again for those free drinks. Writing this review in hopes that the business owner see this-- We were extremely lucky to avoid a major problem today. My friend and I both have nut allergies, mine is major while her is minor. We came for breakfast and both ordered the 1lb burrito that has mole in it. We were not made aware that the mole had nuts in it since it was not displayed on the breakfast menu which is what we were looking at. We were made aware that the nut disclaimer was on the lunch menu, but we were only looking at the breakfast menu because it was 9am. My friend took a few bites of her burrito and started feeling sick and asked the cook what was in it and that's when she found about the nuts in the mole. If I had eaten the burrito first, I would have been in an ambulance and hospitalized. Thankfully this was all avoided and they remade our food. Food is good and I don't want to leave a bad review just for this mistake but it needs to be addressed more appropriately to avoid any future food safety misconduct. Almost great but pretty good. I went here two late mornings in a row while on vacation. The coffee is really the star here. I loved the Colorado Avalanche speciality latte with white chocolate and coconut so much I got it two days in a row. Seriously delightful flavor and not overly sweet. My hubby and I both ordered a breakfast burrito and he isn't a big veggie guy and the burrito came with tons of corn, peppers, and raw onions, that wasn't described in the menu. I didn't mind the fresh veggies, but my hubby had been expecting a simpler dish. The thin, seemingly quite fresh, flour tortilla was the better part of the burrito as I didn't find the inside ingredients that impressive. Since this is such a convenient place, I went here a second day in a row and ordered a breakfast bagel with egg, sausage (they were out of bacon), and cheese. The bagel was quite thin and overall had very little volume to it. The hole in the middle of the bagel was huge so you get very little bagel. The sausage inside was small bits/scraps. The burritos were tasty. My coffee had a weird cinnamon or nutmeg seasoning which wasn't listed under the ingredients; it wasn't horrible but it wasn't what I was expecting. The staff was a let down in my opinion. The lady who greeted us at the register was pretty rude and make me feel unwelcome. If the lady at the register wasn't so rude, I might have asked about the drink. She truly soured the whole experience. We eat there every chance we have. We live in Denver so we have to create opportunities to go there. The food is always excellent. They adjust food according to the guests' needs. You watch them putting your plate of food together and can identify items you want and items you don't want. Three of us, on this latest visit, ordered 3 different items and all came as ordered and delicious. Staff are always great.
