She has been making cavatelli, a pasta renown from the region of Campobasso in Italy, while sitting in the restaurant in plain view of patrons for almost 30 years dutifully rolling the dough and making cavatelli. All you can get here is cavatelli in various types of sauces and additions as well as pizza. The rock star, and my favorite, in all of this is the cavatelli in a delicious meat and tomato rage sauce. I assure you that you can't find this unique combination of freshly made pasta, superb ragu, pizza, wine and the ambiance with Anna Maria anywhere else. The service was also amazing with all of the waiter's choices panning out wonderfully. As delicious as the food was here, it was the post prandial coffee that still remains etched in my brain. Thne java here edged out the Tazza d'Oro in Rome and even the Café Gambrinus in Naples. In my 22 days in Italy last November, this modest restaurant in beautiful Termoli had the best coffee.
