Well we visited her Grand Openlng Truck Location here in Provo on Saturday, May 4th. I had to see…read morewhat the buzz was all about with this solo-mama business! So I got: chocolate caramel Sammy, chocolate chip Sammy, red velvet cake, chocolate trunch cake, and the raspberry cake. I didn't even wait till I got home to try all of these, as I sat down not too far away from her truck to try all these and give an honest review. First off, Carisa was super sweet, and even gave hugs to her customers waiting in line before she started setting up - which was such a personal grateful gesture. First off, chocolate caramel Sammy: appreciated the chocolate flavor with a not overpowering caramel in it, chewy-and-chocolatey-satisfying! Chocolate chip Sammy: great flavor, also chewy and with colored sprinkles in the dough - my 4 year old really liked it. Red velvet cake: was surprisingly really good, as it seemed like the middle icing (towards the middle) seemed to include some kind of cookies-and-cream icing, next to the regular icing. Chocolate Trunch cake: I love that Carisa used a not-so-sweet chocolate mousse in between the layers of cake, to balance the semi sweet ganache icing (which was also in between the layers of the cake) and the outside layer of icing (which was the sweetest layer). This outside layer of the icing was indeed the sweetest, but it was a thin layer which I really appreciated! Raspberry cake: I'm normally not a fan of yellow cake, but this ended up being my favorite! She had fresh berries mingled in with the icing in between the layers of the cake (reminds me of summer!) The icing she used with this (on the outside) was also thin, but she balanced it out again with the sweet outside icing and underneath this layer was a pink frosting with bits of berries mixed in. The texture of her cakes are a bit more dense, but still presenting to be airy.

The green enchilada sauce was so fresh that I could taste the tomatillos as if they were plucked right off the vine! The melted cheese had that cheese pull that social media influencers go crazy for, and the corn tortillas tasted soft and comforting. This food rivals that of Sol Agave and Red Iguana. The interior is really cool too. Dimmed lighting, dark brown wooden floors that give it a sophisticated air, ropes and wood crates and a custom-designed counter that definitely takes you oceanside. We were some of the first customers to arrive on a Saturday and our food took a while to make (30-45 minutes). But the flavors, fresh ingredients and happy service that made us feel like family, all made it worth the wait.

A+ on the tacos. A++ on the enchiladas. It's a level up from other restaurants in the area. It is slightly more expensive ($15-20 entrees). Worth it. Fresh, made from scratch. Excellent guacamole and salsas. Amazing sauce on the enchiladas. The inside of the restaurant is designed really cool. It has cool brick, lanterns, painted areas. Awesome Mexican vibe, nice plates etc. It's a higher end feel. Good place for a date night but still has families in there. Our server was great, other people kept checking with us and they were very nice and pleasant. The manger (owner?) came by and I talked to her for a few minutes and told her how good our food was. She was telling me about how every single thing is made from scratch. It really was good. I was pretty surprised that this place has been just sitting there on Main Street in Payson. I don't want to get anyone in trouble, but I think she/they would benefit from a conversation with management. Again, it wasn't crazy, but just created a rowdy eating environment.
