On my return visits, I've tried the Western Omelette (pro tip: ask for it with their jalapeño cream cheese for a delicious kick!) and, for the first time ever, chicken and waffles. Both were fantastic -- and honestly, I'll probably never order chicken and waffles anywhere else again. Still, I always find myself coming back for the huevos rancheros. Funny story: I asked the owner/waiter about their huevos rancheros recipe. He told me it's been in the family for 45 years. The ingredients are surprisingly simple -- nothing fancy, not even cumin -- so either he's guarding a well-kept family secret, or his father, the cook, has simply perfected the art of turning ordinary ingredients into something extraordinary. As far as ambience, this place is just an ordinary, mountain diner. I love their floor though, and I would like to replicate it in the next cabin I build.

The owners were some of the kindest, most welcoming people we've met on our 10 day road trip. The burger was one of the best we had on our entire Colorado/New Mexico road trip, and I wish we had ordered more fries! As parents traveling with two young daughters, we especially appreciated how family-friendly they were. Maybe I should note that we were here mid-week around 1 PM or so. They didn't seem too busy, but this looks like it might be a small operation.
