Le Chant pleases me with the superior quality of their food- it had something in it that makes it stand out from similar restaurants in the area. To every beef and fish filet, sprig of basil and micro-drop of virgin olive oil there is an angle of acute quality which is not meant to be wolfed down, it is meant to be slowly cherished to feel a satisfaction in what you ordered. On the liquid side of things, the menu of sweet wine, sparkly champagne and strong whiskey is neatly plotted on a chart for your convenience- it describes the type, the sub categories and age, the amount and the concentration along with many other aspects of a good alcoholic beverage. Don't want to drink and drive? No problem, Le Chant offers a equally large selection of natural, thick juices or still and sparkling waters. The courses are set up to make you 80% full (the optimal amount for proper satisfaction), starting off with a delightful set of breads with a small pipette dropper for adding precise amounts of olive oil, the next stage is the starters you ordered, usually cocktails of seafood or salad (I ordered a lobster cocktail) topped with a sprig of basil or other greens. The main course is the most exciting part, with fillets, steaks, risottos, pastas and even top notch quality beef, onion and tomato burgers together with fries made right in the kitchen. Deserts cool you down with either an assortment of sorbets, ice cream (for the kids), fruits, coffee, tea and pastries, served with a kind of warmth that is restrained inside the core of the dessert that triggers a pleasant feeling when the chocolate of vanilla melts in your mouth. Switching the subject, the staff (including the chef) are really kind and welcoming, always happy to answer questions and provide you with assistance and information, together with executive level service and food. In a Nutshell, Le Chant D'Ossieu is a quite French getaway that gives dishes quality instead of quantity, perfect for a birthday of even to just hop in for a quick chat in a quiet wooden, candlelit atmosphere, served with red wine or Chivas Regal.

The food is of very good quality, the service did not have their best day this evening in connecting with customers or even showing a smile on their face. That is a minor point in my experience. The prices are a bit on the high side, but the quality as well, so in good balance, but good to know. Funny thing is that when I checked in on Yelp they offered a free G&T which seemed to be an offer from a view years ago. They had a big laugh. I still hope they did not put my G&T on the bill, but I doubt it. They did not seem to get my hint. Anyway, for the G&T I would also come back, they really know how to create and present a good one and in different varieties. I did not have lobster, which they serve in different ways, but they also had some other beautifully created dishes with fish or meet. Some as starter as well as main course, so a small portions is an option. The amuse was a surprising blend of tastes. Also the pata negra ham we started with was very soft, like it melted in your mouth. The finishing touch was the Panacotta desert presented like a colorful piece of art.

There was no attempt made by the staff to rectify this in any way, whatsoever. I understand that these things happen. Any attempt at a genuine apology would have prevented me from writing this review. There wasn't an offer of a beverage, or any discount to the meal. They could have chosen not to charge us for the two bottles of water. There was an optional course ordered which I attempted to cancel (naturally, I lost my appetite after seeing a live insect crawling in the second course), which they informed me that they could not cancel without charging me. They could have offered the extra course for free. There was the option to add a spoon of caviar to another dish for extra charge. I explicitly asked whether that could be on the house, you know, given the aforementioned insect on a previous course. Not only was this denied, the server did not even bother to acknowledge the comment. Lastly, when the check arrived, I informed them that there was zero attempt made to rectify the mistake of the insect. All we got was an apology that the staff was not able to pick up on the signals of our dissatisfaction- as if the bug, the request to cancel the optional dish free of charge, the willful ignorance over the caviar, and my complaint after getting the bill were not enough. Even without the insect incident, the food was phenomenally subpar for this city. My recommendation would be to never visit this restaurant. The food is terrible, the conditions are unsanitary, and the service is appalling.

I am a little bit restricted by my vegetarian diet which is what ultimately directed us to Bolenius as they have a plant-based option. If you're visiting Amsterdam as a tourist, it's a bit of a trek from the city center but pretty quick and easy to get there by the metro, which was our mode of transportation. Our reservation was at 7pm but it was such an incredible experience, we literally did not leave the place until, I want to say like 10:30pm. The interior decor is unique and vibes with the brand pretty well. The service was excellent from start to finish. It is definitely a team effort as we interacted with many different servers who were all kind, wonderful, and welcoming. Everything was thoroughly explained to us. I went the vegetarian tasting menu route and GF did the standard tasting menu. We also accepted most of the additional add ons like wine pairing, their recommended beet dish, and cheese selection at the end of the meal. I was grateful to see a variety of ingredients used for the vegetarian menu instead of just the standard mushrooms 100 times over and over again that is common at other establishments. They also employed many different textures and innovative presentations to the dishes including the foam, which I'm pretty sure is required for a restaurant to get a star, but also things like a shaved and latticed ASPARAGUS dish. The dishes were, as you would probably expect, like works of art. Like I said above, I have somewhat of a history dining at Michelin starred restaurants but I think it's safe to say that this was the best experience I have ever had and cannot recommend it enough.

It's on the fifth floor in the black office looking building, that sits lonely in the field. No signs outside. Nothing. You take the elevator to the 5th floor and the restaurant opens up in front of you. Large window wall, industrial ceilings, lights. It looks very cool. We arrived at 18:45 - a bit late for our reservation because we were lost. They had probably 5 tables at that time. Ordered 3 course dinner, and here is where I am taking a star away - it took us nearly 2 hours to get an appetizer, main course and the desert. With a lot of waiting in between. Some tables that arrived after us got their meal served before us (same 3 course) some tables were served much later. Food was interesting, I wouldn't rave about it but it's a good value meal. I don't want to be back, but if you are in the area, and tired of you regular place then I think it's worth giving it a try.

We didn't get out of there until the restaurant was empty at 11pm. To me this is unacceptable. I was falling asleep by the time dessert finally arrived and asked for it take away - but they told me the chef doesn't allow this...
