This is a long overdue review…read more.. Once I found out that they give cheese tours, I made it a compulsory event on my to do list. They host monthly Saturday cheese tours and it cost $7 per person. Remember to call or email in advance to reserve a spot. My boyfriend and I arrived ~10 mins earlier than the scheduled tour. The ladies in the cheese shop area were super nice and told us to start sampling the cheese whilst we wait for the other parties to arrive. This was the first time I heard and tasted quark. We were told by the staff that it can be used in place of yoghurt - eg. eat it straight up or add it to baking. For the tour, they will give you shoe/boot covers and a hair net. They shut down the production line whilst giving the tour, which makes sense for hygiene reasons. The production area was immaculate! The tour guide told us they clean all the equipments and production area at the end of each day after a batch of cheese is made. The tour was informative and our guide was happy to answer all our questions. Apparently ~4000 liters of milk makes 100kg worth of cheese. Out of all the different production stages/areas, we spent the longest in the impressive "cheese cave". There were so many wheels of cheese!!! Each wheel weighs ~10kg and the net worth of cheese in the aging room were in the millions. After the tour the different parties waited in line to buy cheese. The cheese are all vacuum sealed to prolong storage life. Out of the 6 types of cheese I bought, the truffle flavour was favourite. It had a strong truffle aroma with an underlying milky taste.
