It was one of the best meals I've ever had in my life. It is small and filled with long wooden tables where everyone is sat together. I went during lunch time on a Saturday and it was quiet. The menu changes frequently (and isn't online) so I can't look up exactly what it was that I had but it was all amazing. I had a sparkling wine cocktail and the sparkling wine of the day. Both were delicious. The homemade potato bread appetizer was out of this world - so doughy and soft and delicious. Next, I had lamb sticks - almost like mozzarella sticks but instead of cheese they were filled with incredibly fresh lamb. So so good. Then, I had a mushroom and egg soup that was amazing. Next, buttery lobster and potatoes. Finally, a pistachio and berry dessert which was amazing. If you are in Edinburgh, you HAVE to come here!!

I first…read morecame across Ben about 3 years ago when he was home for the holidays and doing a talk on food at Iglu - grasshopper soy sauce and bee larvae granola anyone? For the record, both were super tasty! Ben previously worked at Nordic Food Lab and following this, at the studio, unusual and traditional ingredients are presented in new ways with an open kitchen so diners can see the dishes in progress and large communal tables. I came for dinner last week as Roddie Loan who supplies seafood to michelin starred Noma was here. Roddie left Norway at 3am on Thursday morning with clams, sea urchins and seaweeds, plus aqua vite to cook for lucky Edinburgh punters who managed to get booked in for his Arctic Feast. What a feast it was! I'd never had sea urchins before and the inner five year old was mesmerised watching them still move, even after we'd eaten the insides. They were lovely and sweet. We followed this with clams and mussels - fab. Then came clam tartare and my gluten free version came with buckwheat and beautifully earthy scarlet capped mushrooms. Cod with beautiful buttery mash followed and then dessert was an Norwegian rice pudding with cinnamon and butter. Sounds weird but was lovely. I didn't get cheese and instead had a sea buckthorn sorbet which was both savoury and sweet. Throughout, Roddie and Ben talked us through the dishes, telling stories and providing a really great night. The communal dining experience won't work for everyone but I love it - trying new things with fellow co-conspirators really adds to the atmosphere.

The red vinyl booth seating, shiny chrome, mini jukeboxes in each booth and thoroughly wholesome Americana vibe is done well. Unfortunately, I feel that it's more style than substance. The menu looked interesting but failed to excite, The waitress made it clear we were still in Scotland and did not transport us to the land of over enthusiasm and gushing service. Whilst there was nothing wrong with our food and it arrived piping hot it was a standard burger and chips. In an American Diner I expect perfectly crisp french fries not anaemic, limp chips that you know were pulled out of the freezer minutes before. The other sides were equally disappointing frozen onion rings and bought in coleslaw. I wanted to like Ed's Easy Diner. I wanted to it to be more than just a pretty face. I'm just a bit meh about everything other than the decor.

Still vegan, but much more focused on a robust fried chkn offering and other fun American-inspired junk/bar food. I appreciate how comfortable they've made the atmosphere; the staff has consistently been so friendly and funny and human; walk-ins welcome!; the front seating has a bit more restaurant-y feel, I prefer the back seating which has a more pub-y feel; and, the food is STILL so craveworthy and memorable. I've tried the hot honey popcorn chkn topped with chilii, spring onion, and sesame (quite spicy! the popcorn chkn texture wasn't my favorite); the buffalo hot chkn wings with blue chz dip and celery (SO GOOD; the perfect amount of heat, but I could go for twice as much sauce; the texture of this chkn is much more satisfying and filling!); the chilli cheeze fries topped with a chipotle mayo (there's SO MUCH food here: they are generous with the chili sin carne... it was delicious piping hot when it came out, it was just as delicious a little cold and congealed an hour later; a MUST for a group!), the jalapeno slaw (it was spicier than, and not as refreshing as, I was expecting). The Frickles (fried pickles) were okay; I was expecting coins, not spears, so most of the coating kept falling off. And the fried chkn ceasar salad was nice: it's ENORMOUS and easily sharable between two people (say if you wanted to get those chili cheeze fries too), it comes with bacon and a less-fried version of their chkn, and it's very heavily dressed. Definitely not healthy, but certainly the most fresh thing on the menu!

On the second visit, I had the Lucky BBQ Box; mind and mouth...blown! The bbq ribs/steak had a "meaty" texture and the sauce was hitting(positive term)! The southern fried chicken was yum too, just wish they would slather the sauce that comes on it instead of just sprinkle. The charred street corn also fire(positive term)! The slaw was pretty decent, and the potato salad was okay. It was a bit more food than I could eat, so I took some away with me in a box. Staff were lovely and accommodating on both visits. If I ever return to Edinburgh, I'll be sure not to skip another visit to Paradise Palms!
