Despite how busy and crowded it can get in a smaller store during peak hours, there was just an undeniable joy in the air radiating off of all the patrons in the store. Anyways, onto the donuts. The Apple Fritter, despite its lack of outer texture had a really nice crispy glaze on the outside with a generally soft and moist dough on the inside. While I couldn't find many apples and would've preferred a heavier cinnamon flavor, the Fritter was still delicious. (7.2/10) I was most excited to try the Buttermilk Cake Donuts as they aren't as common in our area, but they didn't have the signature tang that sets buttermilk donuts apart from regular cake donuts. Regardless, the dough was dense, moist, and as a member of team Cake, I was not disappointed. I would highly suggest trying the vanilla iced coconut buttermilk; flavor explosion. (7.8/10) The Raised Donuts are very soft and lean more airy than pillowy. Mine had a noticeably fresh chew to it even underneath all the toppings which I was really impressed by. (8.3/10) The real standout was the Old Fashioned Cake Donut. While the chocolate icing didn't fully hit the mark on texture, the donut itself was divine; perfectly crunchy texture with a stable crumb and delightful sweetness. Very impressed. (9.2/10) Additionally, the service was quick and staff were willing to answer questions that I had about the donuts. Overall, while there were some things to be desired, the only real regret I have about my visit to Cowboy Donuts is that I ran out of donuts. Definitely check this store out if you're passing through Rock Springs.

As you walk around there's a small table with about 20 different infused olive oils and vinegars with small piece of bread for guests to sample as you wait. I tried the bourbon balsamic vinegar and the green chile olive oil and was impressed. Had I not been here on business I would have bought a bottle. I ordered the classic Italian. The sandwich used focaccia bread which is already a huge plus. Simple cold cuts and a tasty spicy mayo make for a delightful and light sandwich. In such a small town, a place like this is world class. You could put it anywhere in the country and they'd fit right in. They sell raw milk and meats from a local rancher which I thought was cool. Apologies for the lack of photos but as I said I was here on business and didn't have the usual time though the place was too good for me not to review. If you're in the area you have to come here for lunch.
