Its owner, Tony, aver engaging man, is building what I hope to be (first full year in this location) a very successful restaurant predicated upon material and ingredients acquired by artisanal suppliers and includes many providers he knows well and refers to them as his friends. The Chef de Cuisine, Dario is also very engaging, is from Italy and produces the best pizza and meatballs one could hope for. The back of the house staff also includes a young man (I am a pretty old Fk'r) named Robin who joined us out front for a picture I've posted and taken by, yes, Tony himself. We plan on returning prior to departure from our 1 week stay in Valencia and we would love to see his magic spread to the USA, hint-hint Seattle, please. If you have ever read my reviews I typically don't critique food as I am not a foodie. It was a warm night and the tables out front were filled, so we sat inside across from the bar. I have never seen harder working people, and the two of them turned out meal after meal after meal. The food was absolutely delicious - so much so that we went back again later in the week, even though our trip was short. The wine, the fresh olives and cheese, the main dishes, and the desserts all were exemplary. When someone at one of the out-front tables was rude to the server, she handled it graciously and sweetly, so we complemented her when she came back in, we all had a good laugh, and she brought another little something to taste along with our dessert. You can't beat grace under pressure with a sense of humor and generosity to go with a fabulous Spanish meal.
