I have spent a good deal of time in Philadelphia and NYC in the US and what was always crucial was the bacon, egg, and cheese on a roll - especially the day after a long and late night out... I thought this kind of delicious experience would be certain to elude me in Paris but then I discovered this place when I was taken there by some colleagues for lunch.
The thing that makes this place different from other sandwichy/lunch type places all over Paris is that they cook you an omelet, and then put it on a fresh baguette for you to enjoy. The food is take away (well you could eat there but it's pretty smokey inside). What is really awesome though is that, while most places will look at you weird or just flat out refuse special requests in Paris (ça n'est pas sur la carte monsieur donc ce n'est pas possible...), the cheerful staff here were happy to cater to my urban American cravings.
The closest thing you can get to chedar in France is called "mimolette". Then, this place has something called bacon but it is Canadian bacon at best, which is not to say that it was not delicious. Thus "un sandwich mimolette-bacon svp" worked out pretty well, and it is hard to beat a tasty French baguette to top it all off.
