As soon as we walked in we were warmly greeted with lovely smiles and 'Welcome In' by the young ladies behind the counter. I had some questions about their products and one of the butchers working in the back came over. He explained how they work, answered all of my questions and said they stand by their products, if we don't see something to please ask. We bought some steak and ground beef to try and boy, there's no comparison to supermarket meat, this was so flavorful. We stopped in today and pickup up some pork chops and ordered 5 pounds of ground beef and some steak. They are even thinly slicing the steak for us - now that's service for you! I grew up in the 50's in Europe and this shop brought me right back to that time where service and products were always top notch, and the family butcher took pride in his work and would cut or trim my mother's orders to suit. I think we'll stop looking now: we have our family butcher in The Country Butcher.

Once I cooked the beef ~ a top sirloin cap, also known as Picanha (the crown jewel of Brazilian barbecue cuts), I wished I'd bought more or that the shop was less than a 70 mile drive. Last year we bought a quarter cow from Buds Meats with the cow from Stemple Creek. We had a great…read moreexperience with them and tried to do it again this year but they weren't taking orders, which led us to Willowside. We opted this year to do a half cow, which now seems to me probably overly optimistic, but that's what we did. We wanted grass fed/grass finished which is usually more expensive and harder to get, but Willowside told us no problem and we put down the $100 deposit. It seemed like almost overnight they were able to get all the stars aligned to get the cow ready and they were already calling me for preferences on cuts. I love the attention to detail we were given on education of different things, because for me having been a vegetarian for many years, this is a lot of info building still. We found out our cow topped the scales at over 800 lbs so our half share was about 412 or so and cost about $2300. We opted for vacuumed packed rather than butcher paper, and gave them our preferences on size of cuts. When we arrived to pick everything up we did have some challenges with making sure we had everything - I was told it would be 8 boxes but it only ended up being 6, and we couldn't find the bone marrow which was one of the big selling points for the half cow. Undaunted we took our prizes home and I set out packing two complete freezers full of meats and bones. I have yet to try the beef but it looks beautiful. Overall it was a good price, quick turn around, and I especially liked that the grass fed cows come from Full Circle Ranches which is in Petaluma and is run by a friend of the owner of Willowside so that's good local business. Definitely looking forward to burgers and roasts in the very near future!
