I like to sample a variety, so I went with the Bobby's Usual of brisket, jalapeño cheddar sausage, and pulled pork with Bobo's Hot Corn + Hillbilly Beans. He offered onions, pickles, and jalapeños as side condiments along with their homemade BBQ sauce. I initially sampled the meats without sauce, but I have to say the sweet/smoky flavor of the sauce is a great compliment to the meats. You can tell Bobby learned his trade from Texas...solid brisket with a thin fat cap with a nice peppery crust. The pulled pork was perfect...moist and tender but still maintaining firmness. While the sausage is not made in-house, you could have fooled me. Nice crispy skin with a good jalapeño kick and plenty of cheese. The sides are exceptional! I loved the sweetness of the beans, and the Bobo Corn (I believe it's grandma's recipe) was addicting. Don't let the name fool you...there's a little heat, but the flavors are wonderful. I chopped a bit of onion and pork into the beans, a great flavor combination. The atmosphere is bright and open with some Texas decor...great place for family. Really good food and excellent service from this TX style BBQ spot...looking forward to my next visit to Columbia for more.

The staff were friendly, but the younger staff were very consumed with their gossip and how much they make in tips, making them unapproachable when it came to questions about the menu. It was really one server in particular. To start off, we got an order of the fried pickles. They were probably the best fried pickles I've had. The breading was what seemed to be a corn meal/ Panko mix, which made for a nice, crispy outside with a softer inside. For ranch lovers, they had some decent ranch as well! The grilled onions, the sweetly drop peppers, the seasoning on the chicken, and the dressing came together for a super delicious sweet and savory, but tangy, burst of flavor. Highly recommend giving it a try! The wings were deliciously smoked and still had the crunch of what you'd expect from deep fried wings. The wings are also really quite large and packed lots of meat. The buffalo sauce did get lost in the Smokey flavor, but they were still really tasty.
