Casa Manolo is one of those restaurants in Ibiza where it sits right next to the water, however, you're not guaranteed a great seat with views. Due to the location, dinner reservations are highly encouraged.
For starters, I started with the Spanish Croquettes and the Bread with Aioli. I have never had croquettes such as this, as this was more a vegetarian type of croquette. I liked that the croquettes had a light crisp on the outside, and a soft and mushy filling on the inside. Flavors were more comforting. The Aioli here is more oil based and less flavored compared to others I've tried.
I have dedicated myself to an all Paella diet for the remainder of my trip. Casa Manolo was next on my list. Unfortunately, after trying the Paella Ciega (rice with seafood without "bones"), I thought this Paella had too much tomatoes and just didn't hit the right note.
