The menu is pretty sizable (literally and physically)! The classic Percheron is diezmillo steak, mozzarella, avocado, tomato, onion, mayo, wrapped in a flour tortilla and bacon! $15. I was behind two parties of two and my food took 15 minutes. I opted to take the food to go, since it was 9:45 pm. Thats always a risk because the food might not be as fresh as when it's freshly served. The woman ahead of me asked for well done crispy bacon wrap. I should have done the same, but I wanted to try it the standard way first. I really wanted to love this, but the standard soggy bacon wrap is not my thing. My stomach could not cope with the grease either -- this looks like pretty low quality bacon that is mostly fat. I was pretty disappointed and only finished half!

It is located on empty piece of land with nice mesquite trees for shade. The food was very tasty and the portions adequate. I had a Birria toco and a Cabeza taco ( I had them add cheese and take off the cabbage). Both were outstanding and as with the other food trucks only $3.00 each. Matt had a birria taco and a steak quesadilla. He said they were very good. The green sauce was very flavorful and not too spicy. The red sauce was a little hot but still tasty. The place was very busy but luckily they had seating for over 20 customers. Most of them must come often because they seem to know each other. My only complaint (I had the similar situation at other trucks) was that the chairs sat very low to the ground because of the dirt base and I needed help to get up. Because the chairs were sitting on dirt, not much can be done about the chairs. If you are flying into or out of town, this would be a nice place to pick up fine Mexican truck food.

They sold out fast, and when they came back on Thursday, I made sure I was first in line no way I was risking missing out twice. Their menu is incredibly easy to read, streamlined, and straight to the point: it's all about the birria. They keep the payment process simple too, cash or card, no drama, just efficiency. I ordered a birria taco and a mulita, which is basically a double-tortilla birria quesadilla situation, and both were absolute standouts. Prices are on point, especially for the quality. You can literally smell the birria before you even get close to the truck. The meat is juicy and seasoned perfectly; you can taste every layer of flavor. And the cheese? I'm convinced they're using Oaxaca cheese because it is incredibly rich and melts just right. One of my friends tweeted that it was "Truck Exhaust + Good Eats". That kind of sums it up. That being said there were also huge lines, I waited for about an hour for MaFooCo and my friend waited an hour and a half for Planet of the Crepes. The food that was well worth the wait, but like a boy scout you should be prepared. Take heed if you plan on going to an event like this, get here when it starts to avoid the long lines or divide and conquer sending members of your group to different trucks and sample together. Our group was able to hit 5 different hot-spot trucks using the divide and conquer approach. Seating is limited so if you have some folding chairs they will come in handy. There is a huge value in this event for those of us who don't work near a food truck. It's a casual and inexpensive way to get to try foods off the beaten path. I will definitely be at the next Round-up!
