Pollo Fundido
Andrea T.

Hoping for a good Mexican place nearby, we came to the new place, Cabo Sol. Since it opened, there have been lots of cars in the parking lot when we have passed by. I had one question in my mind as we entered, "Is it the same owners as the recently closed Los Cabos (closed a couple weeks before this place opened)?" I will get back to that later. The place has a welcoming feel. Bright colors, clean, interesting chairs, overall, lots of character. We were seating quickly and drink orders were also taken quickly. The menu had some of the same items as Los Cabos had but what Mexican restaurant doesn't have some of the same dishes. My question remained unanswered. It did take a little bit longer than desired to have our orders taken. I went for the Pollo con Chorizo without beans. My husband selected the Pollo Fundido (was his favorite at Los Cabos). The food came out rather fast. I really enjoyed my dish as it had a good amount of spice and the chicken was tender. My husband said he would give his dish a 4 as it was not as crispy as he would have liked (needed to be deep fried longer). The only true complaint I had about the place was how LOUD it was. There were only 6 tables full (less than half the place) and it was noisy! When we paid, which is done at the front, I asked my still unanswered question as to if this is the same owners that Los Cabos had. And the answer is, yes. Same ownership. All I can hope is that they keep their food and service at the current level and not let it taper off like Los Cabos did.

Fajitas Locas

Shells and tails still on the shrimp buried in the fajitas. Kitchen told the waiter that is the way to comes.

I had the chicken chimichanga lunch special. The chicken was tender and juicy. The rice and beans were very bland. My Husband had the fajita lunch special. Said it was full of flavor however I was unable to try it as it's served with pineapple (allergic). He was given 3 small shells with the meal and had enough meat for additional shells. The chips were thick and crunchy. The salsa reminded me of canned salsa with a hint more lime. The food was good but nothing outstanding. They do offer a lunch original margarita special 10 oz for $2.50. The service lacked attentiveness. I requested my sour cream on the side and never received it. Ordered ice tea no lemon and came with it. Once our meals were served we didn't see the waitress until she dropped off the ticket when our meal was half finished.

3 huge carnitas tacos. It doesn't get much better than that. I wish they were more crisp, though

I wish it was better, but here's a tip for you all Mexican lovers - if the plate comes out ridiculous hot, it means the microwaved it - namely the beans. This place is no exception. The beans aren't made by your Abuelita out back.. They're most likely heated up from prior cooking. Now this place isn't bad. The carnitas tacos were amazing and the complimentary chips come out warm and yummy. I just wish they cooked fresh beans and rice.

I had a pretty good dinner here. The prices were very reasonable. Very strong coffee! The Apple churro was very stale, sadly.

The food was excellent, but the service wasn't the greatest. The server forgot my cheese dip and brought our before we were done.

A couple of others in our group got the Sex on the Beach cocktail - a fruity blast of juices and alcohol. We got a variety of dinner times. I got the Spicy Burrito, which was very tasty, but not spicy...at least on this visit. My wife got the Seafood Enchilada, which was a nice slightly creamy dish. Others got the Arroz Con Pollo (her go-to), Texas Burrito, and 2 got the Carnitas Tacos (their favs). The kids got the Grilled Chicken - a nicely flavored dish, and the other tot got the Kids Enchilada - she ate the whole plate of enchilada, rice, and beans. Our food came out in just a few minutes, and the servers are always checking in and making sure your experience is great. There is indoor and outdoor seating, and they are always genuinely happy to see you! We'll keep coming back again and again!

So I asked the waiter for a recommendation and the picture attached is a special they run or it is off menu but can be ordered on request. It's street taco perfection The cheese is like a Muenster or Creamy Havarti and the perfect amount in the vase of the taco shell. The beef is marinated and tender- a succulent sweet and spice-savory. Then they fry/crisp the shell and the cheese melts into the beef and the shell takes on a golden crispy outside. The broth served on the side for dipping as well as the additional sauces to pour on the tacos make the meal mind blowing. DO NOT ORDER ANYTHING ELSE! Guacamole also fresh and huge portions. Chips and salsa also on point. I will be back!

The server seemed to be in a haste which made for an uncomfortable environment. Perhaps quality control needs to do a reboot of their products to return back to the good quality food they are noted for serving.

It's right next to the truck stop, which is great for weary travelers who are yearning for some quality food in a nice atmosphere. The place is clean and the staff is friendly and accommodating. I really enjoyed the two meals that I had here. I had the Fish Taco plate my first visit and they were awesome. I especially liked the sauce that was provided on the side and the availability of flour or corn tortillas. Today, I had the Juevos Rancheros plate with black beans replacing the usual offering of refrigerator beans. The eggs, themselves, were smothered in a tasty red sauce. Flour tortillas were served on the side. This meal is so good that I had to force myself to not eat the last several bites of the meal as I was already more than full. Of course, there are the usual drink offerings here both with and without alcohol. I had iced tea both visits, so I cannot really comment to much more about it except to say that the tea is refreshing! In closing, I'm sure you'll enjoy your visit to this nice restaurant. Great for families, couples, and singles alike.
