What a great hunt and an absolutely first-class experience with Bitterwater Outfitters in August 2026. I arrived Sunday afternoon, met Jessie, went through the paperwork, and headed to the range to sight in the rifle. From there we met up with Clayton and his amazing 14-year-old son and headed out looking for blacktail deer. We saw a few--OK, let's be honest, they saw a few, and after they pointed them out to me, I saw them too. :-) We passed on several for different reasons and kept hunting. Finally, they spotted a beautiful buck down in the woods that I never would have seen on my own. Everything happened pretty quickly from there. Jessie immediately put out the shooting sticks, I followed the protocol he had briefed me on, Jessie told me to take him, and I did. My first deer hunt since I was 15. Let's just say it's been a minute. The next morning I was up at the crack of pre-dawn and met Clayton for a wild pig hunt I had added on. We spotted some pigs early, but I was too slow getting set up and didn't take the shot. It was 100% my fault, but Clayton was completely cool about it--no pressure whatsoever. We kept hunting, found another opportunity, and this time I got my pig. I can't say enough about what an enjoyable experience this was. Clayton and Jessie are great guys, terrific guides, extremely professional, and just plain fun to hunt with. The facilities are great, the country is beautiful, and the entire operation is first class. If you're thinking about hunting with Bitterwater Outfitters, do it. You need to come here. I'll absolutely be back. read more

What an amazing place! Now that I am moving, I wish I had found Bitterwater Outfitters earlier as I usually do my hunting in West Virginia and Texas. They are a 5 star operation from hunt, guide, to gutting and cleaning of animals and to skull cleaning! I only wish they did their own Taxidermy work. Tara who arranged my trip has always been kind, courteous and obliging. She scheduled me in February and I went solo looking to finish my Texas Ram Slam and Texas Big Horn Slam which I did. I took a Merino Ram ( Rambouillet) and took a Corsican. The prices for each were in line with what I have paid in Texas and West Virginia. The Merino Ram had nice horns, over full curl and a quarter which is how I like them since I do euromounts. The Corsican was also a full curl and a quarter and you can see the skull, he looked fabulous! There is a search for the rams but that comes with hunting . I took a 200yrd shot on the Merino and 50-60yrd shot on the Corsican. By the way, the property is huge!!! Apparently over 400k acres. My 40 acres that I own is nothing compared to this place. My guide was Dugan and he was a pro and I liked him a lot. I actually requested him again on a trip back this St. Patrick's Day! He knew what he was doing and where to look. He also took great pics and videos. He gutted the animals quick and professionally and once we were back at base camp he cleaned them up for meat processing fast and nicely. Bitterwater does a great job with the guides and he is a 5 star guide for sure. Meat processing was also done exceptionally well! I only took the Merino since it is the better of the two rams and yes, it was yum. The meat was packed professionally and labeled very well. The butcher is from New Zealand or Australia and is wonderful person to deal with and the sausage they made was fabulous by the way! Serious meat processing alone was worth 5 stars! Kudos to places that do their own meat processing. I had a great and memorable time! The only drawback was they use a Taxidermist called Life Like Taxidermy which is a piece of shit operation. Avoid them at all cost and wished that Bitterwater didn't use them. See my review on them...They are out of Madera, CA and should be avoided at all cost. Use Mounts Unlimited in Los Gatos, CA instead. I loved my experience at Bitterwater Outfitter so much I am taking my cousin's husband this St. Patrick's Day and already Tara has done a great job of white gloving my experience! If you are looking for a great place to go hunt hog, rams, exotics and whatever else they have on their menu, you will NOT be disappointed! I highly recommend Bitterwater Outfitters for a hunting experience that will be memorable and fabulous! Thank you Tara and staff! read more

a very rewarding weekend . This was a father son trip and our second attempt at boar hunting. We got skunked at another outfitter and decided to give bitter water a try based on the ratings. Upon arrival we sighted in our rifles and hit the ground running. Knowing it was my son's first attempt the guides made sure he got first crack at the wild pigs. The staff to the guides , the butcher everyone was friendly supportive and helpful. Everyone went out of their way to help you succeed . Very confidence building. Yes the days were long but well worth it. This place is top notch . Everyone in our group got a pig . The effort and the professionalism and experience really shows. You have multiple opportunities to hunt as much or as little as you desire. The staff are experts and it shows. I would highly recommend this place and for us staying on the premises made a huge difference not having to commute to and from the facility. Give this place a try they are worth it. Plan on returning for sure . read more

My experience with the team at Bitterwater Outfitters was top shelf! This was my first hunt so I was a bit apprehensive. But from the very beginning, Clayton and Tara were fantastic to work with and made the entire process smooth and easy. Once I arrived on site, Michael got me checked in and settled. He took the time to answer all of my newbie questions and never did I feel rushed. Jake took me out to the range for rifle sight-in in the afternoon and then off we went! The countryside is stellar and the views were endless. It was fun just exploring in the side-by-side, with Jake sharing all of the history of that area. We went through several ranches until we got to our hunting grounds. Jake was the consummate profession and helped me to take my very first pig. As a solo hunter, I took a second pig so the evening was quite productive! Jake and the team did a perfect job to skin and quarter the pigs, and then to explain to me the best way to transport them back home to my wild game processor. I opted to tent camp and it was a great decision. The grounds have water, electrical, restrooms and a shower! The nights are peaceful and serene, almost as special as that morning sunrise. Hats off to the entire team at Bitterwater. I'm definitely coming back! read more

Do not pass them up! I got into hunting six years ago at the recommendation of a longtime friend. I came across Bitterwater Outfitters(B.O.) for a Wild Pig hunt. Mrs. Tara Grant was awesome to deal with right from the start. At every step of the way, Mrs. Tara was prompt in updating me regarding my deposit, scheduled hunt, and other details of my upcoming hunt. My friend and his Son caught wind of my hunt and wanted to join me. The Mrs. Tara and the entire staff at Bitterwater Outfitters accommodated us at every step of the way. Checking In - Michael Renteria. Pure Professional. He has been working for B.O. for 14 years. He met us and handled all registration. He then insured our rifles were zeroed. Michael is patient. Informative. And extremely helpful. Very good Man! Hunt Day - We met Clayton Grant and Michael. We ventured out as a group to get our pigs. They made every effort to meet our expectations. Clayton is "Salt of the Earth" people. He is a "Throw back" to a time I once knew. I walked away feeling I made new friends. Both Clayton and Michael make a great team to get your "tag" filled. They are "Top shelf" people whom run a fantastic organization, and provide a great service. We got our pigs and returned to the B.O. Headquarters. They helped to skin and quarter our harvest. They are hands down the best outfitter I have ever come across. I WILL be returning here and making this my venue of choice to hunt regularly. DO NOT GO ANYWHERE ELSE!!!!! Bobby read more

I rarely write reviews but I have to say the Hunter's Training course taught by Randal Parker was amazing! The man is full of so much knowledge and I could listen to him explain things (and tell hilarious stories) for days. He had so much patience for all our questions and was always excited to give thoughtful answers. That leads me to the best thing about Randal is his passion. You can feel how much this man just love every single thing about hunting and how excited he is to pass that knowledge on to others. I hope to see him again soon and learn even more! read more

Just came back from a great and long hunt. The staff are friendly, gun safe and clean short oriented. This is not a "Fish in a barrel " ranch, you're on a ATV for awhile then spot & stock. You don't have to worry about your meat, they take good care of it and can help get it to your house. Just remember to show up a little early to sight in your gun or come a day early and enjoy Paso, another thing, fill your tank before heading out and take photos before they haul it to the ranch. read more

Had a great wild pig hunt with Clayton and the guys @ Bitterwater Outfitters last week. This was the first hunting trip my buddy & I had ever been on, and it couldn't have gone better. Everything was smooth from the time we contacted Clayton to set up our schedule, to the time we hit the pavement leaving the ranch. Clayton & the crew are a great bunch to work with. Arrival & check-in were smooth and easy. Mike got us sighted in on the range in a jiffy. We spent the afternoon just lounging in the Gillis house, which was superbly clean and tidy & stocked with all the kitchen utensils we needed to cook up some supper. We were out & on the pigs the next morning, right at sunrise. Clayton, Danny, and Ben were on-task with finding the pigs & getting us into a great spot to shoot from. There wasn't a single hiccup throughout our couple days there. I don't think we could have imagined up a better experience. read more

I was looking into a boar hunt with my father and found the highly rated Bitterwater Outfitters. I called and spoke with Clayton and booked a boar hunt for the first of the new year. Painless. I received a call a few days before the hunt from Clayton and confirmed the outing. We drove down there early and got the RV settled in. They had two RV hook-ups! We met Michael and sighted in our rifles quickly and were off to the hunting site. Two hours later we arrived and met up with Ty. Ty and Michael drove us around the property for about an hour before Michael spotted the first pig. Im not sure how he did it, as the thing was approximately 100 yards away on the otherside of an Oak tree. With only its legs visible. He quickly pulled me out of the canam and set up the rifle stand. The boar was quartering off heading in the opposite direction. I had no shot. Ty let out a pig call and the boar quickly turned and gave me his broadside, without hesitation I let loose with a 150gr 7mm mag round. Lung shot the boar was down. Michael field dressed the boar and walked me through how its done. The guys were relentlessly looking for boars, glassing and scanning constantly. We loaded the boar and were off to find my dad his own. Daylight was burning there was probably 5 minutes left of shooting light left. I looked at my dad, the look of defeat on his face. We both thought we weren't getting another pig today. Immediately after Michael was grabbing Ty and pointing into the distance. He was out of the canam in a flash, grabbing the rifle stand. My dad exiting the canam wondering what was going on. There in the twilight of sun down about 75 yards away a group of 5 to 6 boars. I was bewildered Michael spotted them from the distance we were at and was able to distinguish them from the cows in the area. This guy knows his stuff. With only minutes of light left my dad took the shot and took out the boars heart. Second boar down. Everyone was excited over the success of the day. After field dressing him we were quickly on our way back to the ranch. Michael began skinning the boars for us and let us partake in assisting even though we slowed him down. We talked shop and had a good time. Michael talked us through the butchering process and how that would go down. After eating some food we got a fire going in the firepit and cracked open the Coors. Overall, great experience 10/10. read more

I went with Bitterwater last December to experience my first hunt for a European Boar but this time around I wanted to go after a proper California feral pig. Clayton took care of everything and before I knew it, we arrived at the hunting ranch, I practiced the use of the rifle and we got onto a ATV to cover ground. Through the advanced scouting that they did prior to my arrival, we were able to bag a formidable trophy feral pig. Clayton was a true guide and through his guidance not only was I able to place that proper shot but he and the other wonderful people of this company helped reinforce that hunting is my new recreational love and hobby. Clayton, thank you again for the excellent hunt and I look forward to talking to you again soon! read more

Did the hunt school with my 11 year old son. Randy Parker the instructor/ guide was awesome. He had a ton of experience to share. Great stories and information. He helped us site in our rifles and spent extra time helping my son shoot and process his pig. The location was nice. Tons of wildlife around. It was quite hot when we were there so the start times were early to avoid the heat and it worked out well. The onsite butcher was convenient too. read more

I had an epic deer hunt with Bitterwater Outfitters last weekend. They have some absolutely stunning ranches to hunt on. I had been excited about this hunt for over a year leading up to it and it went even better than expected. We saw 9 bucks, a bunch of doe and a good number of pigs including a massive 250 pound boar. There were a few different areas where we pulled up to a covey of 30+ quail. Also saw a big black bear cruising the plains which was totally unexpected and fun to watch. When we spotted the buck I was looking for, we crept up on it, and after repositioning a couple times I got the perfect broadside shot from 80 yards. Put it right behind the shoulder and ended up with a beautiful buck. My guide helped with everything from hunting strategy to field dressing and getting the meat ready for the butcher. Can't wait to share it with friends and family. I'll definitely be back for another hunt soon! read more

I just returned from a weekend wild boar trip with my friend we had great time. We arrived Friday afternoon and was introduced to Zack, who helped us with sighting in our rifle and helped settle us in. Shortly after, we met Clayton Grant and his fun attitude and great hospitality made the stay at Bitterwater even more fun. We went out the same day we arrived and did an awesome night hunt with our guide Bryce. As Bryce took us around his property, which was so beautiful, It was nice to ask him endless questions about the land, ranches and hunts. Just seeing the beautiful rolling hills in itself was quite a treat and very therapeutic I might add. My friend and I both were able to bag both our boars that evening and participated in every step of the way from scouting to gutting to skinning to quartering. If you're going to take an animal's life, you need to give it the respect it deserves by participating in every step from beginning all the way to the dinner table. Otherwise,It's not truly a complete experience, in my opinion. The next morning, we woke up early because they were doing doing work on a cow carcass and we wanted to watch. We also happened to meet "Uncle Bob". He was so cool and drove us around the property and shared the history about the family ranch. We really felt connected to the land because of this and when it was time to leave, we left with an even bigger appreciation of not just the animals that roam the land but the people and operation that they run. Being from the suburbs, It was very educational and enlightening. In a nutshell, if you're a first timer and want to work with some down to earth people, I highly suggest you give this place a shot. Please respect the animal you hunt! I'll be returning this winter for another boar and a Turkey. read more

I just got back from a cow bison hunt with Bitterwater Outfitters which I booked with owner/operator Clayton Grant. I initially had to postpone the hunt for a year and Clayton even offered to refund my deposit which he didn't have to do. This told me that Clayton was an awesome stand up guy. My guide Clint, is an excellent guide: he has a wealth of ranch & hunting knowledge, great sense of humor, and it was a pleasure to hunt with him! The free range bison were really majestic looking and the terrain was very beautiful: it was a perfect backdrop for the bison herd. We located the free range bison herd, which were on the run, which added some challenge to the hunt. The herd finally settled down and I was able to harvest a beautiful mature cow bison after insuring it didn't have any calves. This bison will provide healthy organic low-fat meat for our family. Clayton arrived to help out with processing the bison and getting it back to the ranch headquarters for skinning, quartering, and secured in the walk-in cooler. Creston Valley Meats picked up the meat quarters at the ranch for processing (steaks, roasts, ground burger) and is actually delivering it to my area next week, Auburn, how cool is that? Clayton and Clint are extremely hardworking and are honest as the day is long. They will give 100% to insure you have an enjoyable experience and harvest your game. I definitely plan on returning for a wild pig hunt with family & friends. This is a great hunting outfit! read more

Hunting School - My friend and I just got back from the Bitterwater 2-day Hunting School. Neither of us had ever hunted and we thought this would be a good way to get started. It sure was. Randy is a great instructor with a wealth of experience and knowledge. It's rare to find someone that highly qualified that also enjoys teaching and passing on what they know. In the classroom we learned about a wide range of topics including different approaches to various game and terrains and seasons, as well as rifle choices and even the ins and outs of licenses and permits. On the day of the hunt we learned about game trails, food sources, animal behaviors, signs and too many things to mention all of it. I felt like the kill, field dressing, and skinning was a huge part of the experience and really took me from thinking about hunting to having hunted. Now I just need to gain more experience which I feel like I'm ready to do now. Considering the other ways I could've entered the sport, taking this class and learning how to do it right is really a jumpstart into hunting. Randy and all the Bitterwater people were great. I should not leave out that he has some pretty good stories too. read more

Clayton and his crew have done it again. Every time I hunt at Bitterwater Outfitters I come home with the game I was pursuing. This time my dad and I doubled up on some real nice mature turkeys. I can't thank Clayton enough for being so professional, treating me so well, and putting me on the animals I'm after. He runs a top-notch guiding service with a great facility to store and take care of your meat, a place to stay during the hunt, a shooting range to make sure your rifles are sighted in, and even a little fishing pond to fish in while passing your time during the middle of the day. I had booked this hunt for a friend and I. He is very experienced and this was my first large animal hunt. I had reserved a two-day wild pig hunt. We were called multiple times asking how soon we could be there Friday afternoon. When we arrived we were rushed through paperwork and sighting in our rifles. We were then told to follow our guide to the hunting location. We arrived at a beautiful 20,000 acre ranch and got in the UTV. Our guide Michael drove us around for about 15 minutes when he saw a pig. We raced after it in the four-wheeler and chased it down. My friend won the rock-paper-scissor and shot first. He looked at the pig and told our guide it was somewhat small and he'd like to keep looking. Our guide told him that he had to shoot that pig or he would have to pay an additional $800. He shot it and it was dark by the time it was field dressed. The next day was my turn. We met Michael at he same place at the crack of dawn and once again we went racing around and found another pig near where my friend shot his. I shot mine, dressed it, and we were done by 7:15 in the morning. I had booked a two-day hunt. I expected an experience. I expected to learn. I expected something completely different than what I got. Now I did get pork in the freezer, but for my first big game hunt, it left a lot to be desired. No glassing, no stalking, no learning anything. It was simply tearing ass around on a four-wheeler like a hillbilly. If you've got a couple of hours to kill in Paso Robles and just want meat in the freezer, this is your place. If you want an experience, I would look elsewhere. read more

We would totally recommend this ranch. The drive out is far, but it's beautiful and you do not get any service once you turn off the highway. My dad is an experienced hunter and this was my first hunt ever. My dad had previously talked to Clayton explaining it was my first hunt but also wanted to make sure it was an experience for me. We got there the day before to check in & sight my rifle. Super easy, and the guy who checked us in was nice. Before we went out the next morning, one of the guides set me up on the sticks and we went through a quick 60 sec "training" so I was comfortable and knew what to expect and how quick it can all happen. (I appreciated that) We then went out on the ATV (it's freezing so make sure you have warm layers and gloves!) and drove to a spot where Clayton and other guy (i forgot his name) sorry! Glassed, saw some pigs running, drove in front of them, set up the sticks, boom got my first pig! Wooo! It happened so quick! We took it back to the ranch where they took care of everything. They then asked if i wanted to go back out because i had two tags but my dad also wanted me to experience possibly shooting a bigger boar. We decided to come back later in the afternoon and Clayton was okay with that. We came back around 2:30pm and went out to a different ranch. Of course, being successful is always great but the view and the ride out was beautiful! We glassed for about 15-20 minutes trying to find a good size hog. Clayton did not settle for this one group and said let's go look in this last spot over here. We turned the corner and about 250 yards up on the hill, we saw him & knew that was it. Again, they set up sticks up, got myself ready and boom, got my second pig. Took it back to the ranch where they took care of everything. We were leaving the next morning so they allowed us to keep the pigs in their freezer overnight and we picked them up the next morning. Overall, the hunt was successful. I got my first animal ever and also got a trophy boar. I appreciated Clayton and his guides ! I felt very welcomed & confident. Thanks again. Hi read more

A friend and I booked a wild pig hunt with Bitterwater and it was a great experience. Clayton was very communicative, which I greatly appreciated as this was my first guided hunt and first pig hunt. Clayton hooked us up with Jeff at the Santa Margarita ranch in San Luis Obispo. Jeff was fantastic. Very patient and gracious. He had us on pigs 30 min into the hunt. I took my pig first and after Jeff had gutted and field cleaned it we went in search of a pig for my friend. About an hour later my friend had his pig on the ground. During the course of the hunt we saw approximately 50 deer, 50 turkey, a brown bear and black bear. In all we had wrapped the entire hunt in about 4 hours. Because we were on the pigs so fast I really appreciated Jeff showing us the ranch, taking the opportunity to show us the wildlife and answering all of our questions. Clayton retrieved our pigs that evening and had them cleaned and in his cooler the same day. Creston Valley Meats picked them up the next day and called me in the afternoon to discuss how I wanted the meat butchered. I would add that Creston delivers to set locations including my home area of Thousand Oaks which is a fantastic service and a great relationship and bonus to booking the hunts through Bitterwater. I'm new to hunting and very interested in turkey. Based on this experience I'll likely be booking a turkey hunt with Clayton and his team in the Spring. read more

They made it such a great experience for all of us! Back at the ranch Clayton was awesome and the kids loved it, sitting around the fire at night, and catching fish when we were not hunting. We barbecued several times while were were there on the bbq they had by the fire pit. I would absolutely recommend them to anyone who asked. My brother-in-law and I just finished a wild pig hunt with Bitterwater Outfitters, and we had a fantastic time. My father and I just completed a pig hunt with Clayton Grant. He is a friendly hard working guide. From the moment we arrived we felt at home with Clayton and his team. He made sure we were truly happy and that we had a successful hunt. Dad and I have always wanted to hunt wild pigs. We had no idea where to go and how to find them. Clayton takes all of the guess work out of the process. We felt safe and very comfortable during the hunt. I was able to take a pig within the first hour of our hunt. Dad shot his just before the sun was all of the way down. According to Clayton "I got the full hunting experience". We had to pack the animal out about 500 yards. Clayton and his co-guide Mike took turns carrying it on their back....when I offered to take a turn they were happy to let me help...I think that might have been one of the highlights - packing the animal out. After the animal is processed it's hung in Clayton's on site walk-in refrigerator. A local wild game butcher picks it up a few days later and cuts/wraps and makes sausage for you. This is a NICE benefit to hunting with Bitterwater Outfitters! We didn't have to drag the animal home, try to keep it cold, and find a local butcher. It's all taken care of and then delivered to your location (I'm sure this is for people within a certain area, we live about 3 hours away from Bitterwater). Great hunt, great guide, great range, and GREAT overall experience. We will be returning again next year with 8-10 guys to enjoy another weekend with Clayton and Bitterwater Outfitters. read more

We each had about a 150-lb pig down in less than 20 minutes of the start of the hunt! While this is apparently not typical, it certainly made us happy. The guides field dressed the pigs, snapped some photos for us, and then got us to the on-site meat processing facility. Their butcher contacted us a couple days later. My partner will be using their Euro-style taxidermy service. Very happy. Would definitely recommend. read more

Went to Bitterwater with 3 of my buddies and had a fantastic time. Everyone from ownership down staff were more then helpful and extremely accommodating. The experience was great, the personalities were even better, they went out of their way to make sure we were enjoying the hunt while also providing comedic relief the entire time. Next time we go up, which will be very soon, we're bringing the families so they can watch and learn the correct way. Side note - make sure you meet Bob, ask him about the gate keeper read more

I had an excellent experience with Bitterwater Outfitters. Clayton was patient, friendly and very knowledgeable. I learned a ton about pig hunting and was very pleased to not have to field dress my kill - this was white glove, concierge service without any attitude. With over 330,000 acres to hunt on you're all but guaranteed to have an excellent hunting experience. I'll be back next year and I think I'll try the deer + bring my dad. read more

Absolutely top notch! My cousin and I just came home from Bitterwater's hunting school, and it was more than we could have ever wanted. Everything was clean and organized, the hunting school was very informative and helpful, Clayton and Mike were friendly and approachable and our guide/instructor Randy was probably one of the best guys I've ever met! Randy went above and beyond with our hunt - never did we feel rushed or feel like any questions were off limits. Everything was as hands on as you wanted it to be. Our time at bitterwater was more than a great hunt, it was an overall top notch experience, from the moment we entered the gate until the moment we left. Thank you Bitterwater, and you will be seeing us again with the whole family soon! read more
