The service is impeccable; friendly, professional, speedy yet never rushed. The food is fantastic. When you sit down, you will be given some fresh bread in a little "Raymond" bag, rillette--a pork pâté--and some small olives to nibble on. We chose the Prix Fixe menus Raymond and Belge, but they have a full a la carte menu and most people seemed to do that. The starters of mushroom toast and shrimp croquettes started the parade of delicious dishes. The toast was crispy and buttery with perfect garlicky mushrooms on top. The croquettes were very crispy on the outside with a soft interior. Lovely. The toast came with a green salad. The main courses of Belgian Stew and Sole (Sliptongue) were perfectly cooked, with the fish sliding easily off the bones and the stew beef rich and tender. They came with frites (with homemade mayonnaise) and a salad, and dunking the fries in the stew was an added delight. Dessert--though we were getting quite full at this point--was a lovely crème brûlée, with perfect crispy sugar on top and soft rich custard below. Wow. We also had ice cream in a dark chocolate sauce with some small crisp bits on top (sweetened puffed rice?). It was also amazing. We wish we were in Bruges longer so we could go back. Next time we certainly will.

But I think this might be typical of traditional Flemish food. But the rest of the whole experience was great! The service was great, and so was the atmosphere. We went there for Christmas dinner when finding a nice restaurant that was open was very difficult. The owner/waiter was friendly with a great sense of humor. He started us off with a DELICIOUS sampler appetizer (free, and without us asking for it) of goat cheese pate with bread crumbles and herbs in a small cup, and salmon pate in the same style. We also ordered garlic bread, which was a little pricey for the amount we received. Our meals were plenty of food, and the mixed grill of meat came with a side of frites (french fries). The meats were a little bland without any seasoning on them, and didn't come with any dipping sauces. But a requested side of mustard fixed that. After our main entrees, we decided to split a dessert and we went with the cheesecake. YUMM! Not overly sweet like many American cheesecakes, but just perfectly balanced. The koffie verkeed, translated as "wrong coffee", which is basically a latte, went great with dessert. The total bill was 84 euro, which included 2 beers, 3 entrees, appetizer, a dessert, and coffee. Not cheap, but not too overly expensive by American standards. I would recommend it, but maybe get the mussels instead of the beefstew or mixed grill.

I found the prices to be very fair as well. We sat out on the front patio which just added a nice ambience to a wonderful meal. If we are ever back in Brugge I would stop here again.
