Soy, chimichurri, vinegar, lemon, basil, 5 spices, salt, this place is a celebration of accuracy in the use and combination of flavors. This is clearly staged in the food, without ever saying it with words. The first aperture is just a tiny ball that melts in your mouth liberating two difficult to combine flavors -the saltiness of soy, with the acidity of a vinaigrette. Their dialogue becomes the entire course. Nothing else is needed, and it is amazing.
But then it all starts, as a journey, that takes you to the spectrum of food today. The lamb, the squid or the fennel dessert are just formidable.
Adding to this, the service is impecable. The chef is personally taking care of each customer, and that makes the team be happily engaging with everyone in both a respectful and elegant way, and warm.
