To be honest with you nothing beats the taste of fresh, live Louisiana crawfish during a mid-season crawfish boil with lots of red potatoes, corn on the cobb and whatever else makes you happy. Unfortunately, crawfish season usually only runs half the year and I for one want to eat my crawfish dishes year round so no matter how you like dem there are options whether you're craving:

Cajun Crawfish Bread
Crawfish Meat Pies
Fried Crawfish Po' Boy
Crawfish Macaroni and Cheese Fritters

or a Crawfish Stuffed Turducken the options are unlimited, but one things for sure there ain't no way I'm limiting my intake of these succulent crustaceans because the season ends and I'm definitely not going to settle for the imports.
Despite what you may have heard, crawfish keeps perfectly fine in the freezer now I'm not a fan of freezing them whole but that's just me to each his own. I usually stock up on the fresh peeled tails packed in their own fat and ready for the freezer when I'm traveling to Louisiana so I always stock up before heading back to Florida. Unfortunately there are some crafty marketers out there trying to make consumers think their buying Louisiana crawfish when there not so you have to pay attention to ensure you get the real deal - I trust the products farmed, packaged and sold by Bieber Farm outside Mamou, Louisiana these tails are incredibly delicious and consistent over time but they ain't cheap but so worth the price.
