In a little bit of serendipity, as I was asking silly questions about different flavors and gluten, I realized I was chatting with the owner of the place. He talked to me a little bit about the prevalence of celiac disease in Italy - that's why you need to only ask at most places, and they will have a gluten-free substitute for most pastas, pizzas, and even some dessert items! It was just a nice treat to talk to the owner of such a busy place, on a busy night, as two out of towners who just happened to be passing by. When I got my order and took that first bite...pure bliss. The al dente pasta and the subtle pistachio pesto flavor was delicious. As I dined, I saw more and more people come and wait and I learned they have another location very close by. The waiter would walk them over to that location if they so pleased.
