Began the night with a local beer selection, Star, a Pilsner by microbrewery Alingsås Bryggeri AB. A little darker and hoppier than an American Pilsner but ended up being the perfect compliment for my scallop starter. Beautifully plated in its own shell, cut into slivers and topped with brown soy butter, Yuzu mayonnaise and a bit of puffed rice for texture. Absolutely charming presentation.
For the main course I chose the Mezze maniche. Imagine seared filet, pan fried guanciale and truffle enrobed in the most creamy, flavorful sauce with hints of black peppercorns and lastly topped with aged pecorino. Sounds impeccable, right?
I try to not be that person, the prisoner of the moment.. but taste buds don't lie. Sweden just slaps. Or as they say-- built different. I don't know how they prepared this dish with so much depth of flavor but I honestly contemplated on kissing the chef. At the very least ask if they're hiring a commis chef. I'll gladly work for food.
Thoroughly enjoyed this dining adventure. The staff were all-stars.. doing their best with prompt service and the best english they could muster. We couldn't ask for more. Thank you.
